Small, delicious, irresistible - Meatballs hiding in an eggplant


I guess I can say I won another battle. Or in part at least.
For a long time, meatballs were not allowed in my household. My husband always claimed he hated anything made with ground meat (perhaps lasagna was the only exception). Now that I've made these, he's completely changed the idea. He loved them so much much that he wanted everything for himself. He told me to make myself something else for dinner. Of course I didn't. The only ones I still need to convince are my kids. For some strange reason they don't like "soft" meat, they prefer steaks. Not that I can blame them, but you can't eat the same thing every day.
This dish will be coming back on our menu often, I assure you.
I just completed the eggplants with some freshly baked bread and salad.



EGGPLANTS WITH VEAL MEATBALLS E PECORINO CHEESE
(4 servings) 
  • 4 small eggplants
  • 250 g ground veal
  • 4 slices of bread
  • 2 shallots
  • 100 ml milk
  • 1 egg
  • 1 clove of garlic
  • 40 g of grated Parmigiano cheese
  • 40 g soft pecorino cheese
  • 1 tablespoon parsley
  • 2 ripe tomatoes
  • extra virgin olive oil
  • salt, pepper
  • flour 
Cut the bread into cubes and let it soak in milk for a few minutes.



Squeeze the bread

and mix with the meat, the egg, the finely minced garlic, the grated Parmigiano, the chopped parsley, salt and pepper to your taste.



With wet hands, form very small meatballs. Mine were size of a teaspoon. The smaller the better.



Carefully wash and dry the eggplants. Cut the top of one side, and scoop the pulp leaving the shell about 1/2 cm thick. Chop the pulp.


Put some oil in a large enough skillet and brown the meatballs that you previously dredged in flour.



In another deep skillet saute the onions, add the chopped eggplant pulp, a little salt and pepper, and stirfry until the eggplant is just soft. Add the meatballs and plenty of chopped fresh basil.


Cut the pecorino cheese into cubes (I love Pecorino Sardo, it's one my favourites).


Do the same with the fresh tomatoes.
Fill the eggplants with the meatballs adding the cubes of cheese and tomatoes. Drizzle with oil.


Bake in an oven preheated to 200°C for about 20 minutes (it took me a bit longer because *see the note). You may need to cover them with a piece of aluminium foil so they don't burn.
MY NOTE: I followed the recipe this time and did not pre-cook or pre-bake the empty eggplants, but the next time I make them (and I sure will make them often) I'll bake them first without filling for at least 10 minutes, so that they get soft (it wasn't the case this time). I tried cooking them longer (about 15 min) but the eggplants were still not done, the filling instead needs really 20 minutes.
Do give these a try, they are really tasty, the meatballs are so soft that you won't be able to resist them.
I had more meatballs then I could stuck into the eggplants, so the next day I just added some tomatoe purè, cooked shortly and served them with mashed potatoes (or you could serve it with pasta). Delicious again.



The eggplant pulp was a great addition to the sauce.

MELANZANE CON POLPETTINE DI VITELLO E PECORINO
(ricetta di Cucina Moderna)


Come tante altre ricette che trovo su questa rivista, anche questa è stata un successo. Mio marito che prima odiava anche solo l'idea di mangiare le polpette, adesso le mangia molto volentieri. Le bimbe sono ancora difficili da convincere (per uno strano motivo non amano la carne "morbida"). Non solo sono deliziose da mangiare, ma si presentano anche molto bene e quindi sono ideali per i pranzi o cene di famiglia o con gli amici.
Ho avuto la fortuna di trovare le melanzane piccolissime un giorno (invece di quei mostri che di solito vendono ai supermercati) e quindi ne ho approfittato subito per preparare questa ricetta che da qualche tempo avevo in mente. Non mi sono pentita.


Ingredienti (per 4 persone): 
  • 4 piccole melanzane
  • 250 g di carne di vitello tritata
  • 40 g di parmigiano reggiano
  • un uovo
  • 4 fettine di pane morbido
  • 100 ml di latte
  • uno spicchio di aglio
  • un cucchiaio di prezzemolo tritato
  • 2 scalogni
  • un mazzetto di basilico
  • 40 g di pecorino fresco
  • 2 pomodori maturi
  • olio extravergine d'oliva
  • sale, pepe
  • farina 
Tagliate il pane a pezzettini, mettetelo in una ciotola con il latte per qualche minuto. Strizzatelo bene e aggiungete alla carne insieme all'uovo, il parmigiano, l'aglio tritato, il prezzemolo, sale e pepe. Impastate bene con le mani e poi formate tante polpettine piccolissime.
Lavate e asciugate le melanzane. Tagliate una fettina da un lato. Incidete e poi ricavate la polpa lasciando un bordo spesso circa 1/2 cm.
Infarinate le polpettine e soffriggetele con un po' di olio in una padella larga.
In un'altra padella, soffriggete gli scalogni tritati, aggiungete la polpa di melanzane tagliata a pezzettini e lasciate cuocere per qualche minuto.
Unite le polpettine e il basilico tritato.
Tagliate il pecorino e i pomodori a dadini piccoli.
Riempite le melanzane con le polpettine alternando con il pecorino e pomodoro fresco. Aggiungete un filo d'olio. Mettete nel forno già caldo (a 200°C) per circa 20 minuti. Se iniziano a bruciare, copritele con un pezzo di alluminio.
Questa volta ho seguito alla lettera la ricetta, ed era perfetta tranne per un particolare: nonostante abbia prolungato il tempo di cottura (di circa 15 min), le melanzane sono rimaste crude. Quindi, le prossime volte (e ne saranno tante) farò cuocere le melanzane vuote nel forno per circa 10 minuti (o un po' di più) prima di riempirle.
Mi è avanzato un po' di ripieno di melanzane e polpette, quindi giorno dopo ho aggiunto un po' di passata di pomodoro per fare il sugo. Erano squisite.

TELEĆE OKRUGLICE U PATLIDŽANU


Moram priznati da nam se ovaj spoj mekih, ukusnih okruglica s patlidžanima doista svidio. Čak i moj muž koji je ranije izbjegavao i samu pomisao na mesne okruglice i sve što je spravljeno od mljevenog mesa, počinje mijenjati ideju. Ne samo da je pohvalio recept, nego je htio sve za sebe.


Sastojci (za 4 osobe): 
  • 4 mala patlidžana
  • 250 g mljevene teletine
  • 4 kriške mekog kruha (npr. za tost)
  • 100 ml mlijeka
  • 40 g ribanog parmezana
  • 1 jaje
  • 1 češanj češnjaka
  • 1 žlica nasjeckanog lista peršuna
  • svježi bosiljak
  • 2 male glavice luka
  • 40 g mekog ovčjeg sira
  • 2 zrele rajčice
  • maslinovo ulje
  • sol, papar
  • brašno 
Narežite kruh na komadiće i namočite ga u mlijeku.
Kad omekša, dobro ga ocijedite i dodajte mesu, kao i jaje, naribani parmezan, sitno narezani bijeli luk i list peršuna, sol i papar po ukusu. Dobro izmijesite rukama da svi sastojci sjedine.
Navlaženim rukama oblikujte što manje okruglice.
Patlidžane operite, osušite, i odrežite im jednu stranicu. Zarežite i izdubite unutrašnjost. Ostavite rub od oko 1/2 cm.
U širokoj tavi zagrijte ulje pa popržite pobrašnjene mesne okruglice.
U drugoj, malo dubljoj tavi, popržite sitno narezan luk, dodajte nascjeckano "meso" patlidžana, popržite miješajući dok ne omekša, posolite i po želji popaprite. Na kraju dodajte i mesne okruglice i narezani bosiljak.
Ovčji sir i svježe rajčice narežite na kockice.
Napunite izdubljene patlidžane naizmjenično mesnim okruglicama i kockicama sira i rajčica.
Pecite u zagrijanoj pećnici na 200°C oko 20 minuta. Ako primijetite da odozgor počinje gorjeti, pokrijte aluminijskom folijom.
Ovo je bilo prvi put da sam spremala ovaj recept i bio je jako dobar, izuzev jednog detalja: premda sam produžila vrijeme pečenja, patlidžan je ostao sirov. Tako da vam preporučam (a i sama ću tako raditi sljedeći put) da prazne patlidžane zapečete barem 10-ak minuta (da su upola pečeni), pa tek onda napunite.
Ako vam ostane viška okruglica s patlidžanima (meni jest) dodajte pasiranu rajčicu, malo još prokuhajte i poslužite uz tjesteninu ili pire krumpir.

  3. :)) koja slucajnost, ja bas juce preporucila mami (sama je pitala sta ce sa patlidzanima) da napravi isto ovo jelo, samo bez meat balls, cisto dinstano fasirano meso.

  9. Isn't it irritating when they (husbands and kids) get it into their mind that they don't like something. Well, I have honestly tried to like eggplant, but I guess it just won't happen. but I could probably subsitute squash. How fun to have those little meatballs hidden in there.
