Love triangle: Pears, cheese and Balsamic Vinegar



Once more, Bakespace has inspired and challenged me to do something I've never done before. The challenge this month was to create a dish with local seasonal ingredients. I immediately thought of pears. And to stay true to the tradition and all-local ingredients I decided to make ravioli with home made pasta, fill them with cheese and pear mixture, and top with balsamic vinegar of Modena (I do live in Modena after all).
I can't tell how happy I am with the result and how proud I am of myself for making pasta with my own hands for the first time.
When I told my husband that making pasta was in the end easier than I thought, he said "Of course, what does it take to make pasta at home?" and then laughed, as if he knew what it was like.
I did do some search for recipes and in the end combined three different ones, to get what I thought would suit perfectly my taste. I must say this combination was great. Every single ingredient played an important role in creating delicate and at the same time flavourful dish.



PEAR AND CHEESE RAVIOLI WITH CARAMELIZED BALSAMIC VINEGAR


for pasta:
  • 3 eggs
  • 300 g flour
for filling:
  • 250 g ricotta cheese
  • 50 g Pecorino di Fossa (can be substituted with Pecorino Romano)
  • 1 pear (mine is Abate Fetel)
  • 1 teaspoon butter
  • 2 tblspoons red wine
  • salt, pepper, a pinch of sugar, nutmeg
for balsamic glaze:
  • 30 g sugar
  • 10 g glucose
  • 1 tblspoon water
  • 60 g Balsamic Vinegar of Modena
+
  • 60 g butter
  • grated Parmigiano Reggiano
  • chive 
Sift the flour on the kneading board and make a well in the middle.
Add the eggs, bring everything together, and knead firmly until smooth.
Wrap in a piece od plastic wrap and let rest for 1 hour (time necessary for the dough to relax).



For the filling, cream the ricotta and the grated Pecorino cheese with a fork.
Peal and core the pear, cut it into small cubes and saute at medium heat with a teaspoon of butter.
Add the wine and wait till it evaporates, add a pinch of sugar, salt, pepper and grated nutmeg to your taste.
Let the pear cool for 5 minutes then mix it into the cheese, taste and add more salt if necessary. 

Roll the pasta out one piece at a time and complete with the filling before proceeding with the next one. Also prepare a cardboard tray and sprinkle it with flour.
Take a small piece of dough and keep the rest wrapped while working on it.
First roll it out a little with a rolling pin on a floured board, then pass it through the pasta roller until very thin.
You should get 8 cm wide strips.


Transfer the filling into a pastry bag (without a tip) and place small heaps on the dough (imagine your stripe divided in two and place the cheese on the lower half) 2 fingers distant from each other.
Flip the upper part over the bottom one and carefully close squeezing all the air out. Press gently with your fingers all around the filling.
This ravioli cutter is a perfect tool because not only does it cut them all perfect and uniform in size, but it seals the edges at the same time.
If you dont have one, cut the ravioli with a pizza cutter and seal the edges with a fork.


Place the ravioli on the floured tray, and proceed with the rest of the dough and the filling. I have to say I managed to portion everything perfectly, and used all the pasta and all the filling, making a total of 54 or 55 ravioli.
Cook ravioli in boiling salty water (1-2 minutes should be enough, but taste them anyway).
While the pasta is cooking, melt some butter in a skillet with a couple sage leaves.
Take the ravioli out with a slotted spoon, add to the butter and toss to coat evenly.
Plate ravioli and add a little balsamic glaze, complete with some finely chopped chive.


For the glaze, melt the sugar and the glucose with the water in a small saucepan. Add the balsamic vinegar and cook on low heat until reduced by half.
If it is ready before the pasta, it will stiffen, but just heat it again on low heat and it will be runny again.
Now, pour yourself a glass of wine, relax and get ready for a perfect harmony of flavours and fragrances. Enjoy!

RAVIOLI AL FORMAGGIO DI FOSSA E PERE CON IL CARAMELLO DI ACETO BALSAMICO


Era da tempo che volevo provare (per la prima volta) la mia macchina per la pasta e fare questi ravioli, che immaginavo molto buoni, ma non sapevo nemmeno da dove partire e che ingredienti usare. Così ho cercato qualche ricetta su Internet, ma nessuna era esattamente come la volevo io. La cosa migliore in questi casi è combinare due o tre prendendo da ciascuna quello che vi piace di più. Quindi, da QUESTA ricetta base ho tolto il gorgonzola, ho aggiunto il Pecorino di fossa come nella ricetta di Sigrid (Il cavoletto di Bruxelles), e completato tutto con il caramello di aceto balsamico come suggerito in un libricino di Giovanni Rana. Da queste tre ricette dalle quali sono partita, è nato questo matrimonio, dove tutti vanno d'amore e d'accordo. L'unione delicata ma nello stesso tempo molto saporita.

Ingredienti (si ottengono circa 55 ravioli):

per la pasta:
  • 3 uova
  • 300 g di farina speciale per la sfoglia
per il ripieno:
  • 250 g di ricotta di pecora
  • 50 g di pecorino di fossa
  • 1 pera Abate
  • 2 cucchiai di vino rosso
  • sale, pepe, un pizzico di zucchero, noce moscata
caramello di aceto balsamico:
  • 30 g di zucchero
  • 10 g di glucosio
  • 1 cucchiaio d'acqua
  • 60 g di aceto balsamico di Modena
+
  • 60 g di burro
  • 3-4 foglie di salvia
  • Parmigiano grattugiato
  • qualche filo di erba cipollina


Setacciate la farina su una spianatoia. Formate una fontanella e mettete dentro le uova sgusciate. Impastate con le mani fino a ottenere la pasta liscia e omogenea. Avvolgetela con la pellicola trasparente e lasciate riposare per un'ora.
Per il ripieno, mescolate bene la ricotta con il formaggio di fossa grattugiato. Sbucciate le pere e tagliate la polpa a dadini piccoli.
Saltateli in una padella con un cucchiaino di burro. Sfumate con il vino rosso e lasciatelo evaporare. Condite le pere con un pizzico di zucchero, sale, pepe e un po' di noce moscata grattugiata.
Unite la pera ai formaggi e mescolate bene.
Stendete la pasta, un pezzo alla volta, prima con un mattarello e poi passate alla macchina per la pasta, stringendo ogni volta i rulli fino ad arrivare alla penultima tacca.
Man mano che avete steso la pasta ritagliate le strisce larghe circa 8 cm.
Con un cucchiaino o aiutandovi con la tasca da pasticcere, distribuite i mucchietti di ripieno su una metà della striscia distanziandoli di due dita tra di loro.
Ripiegate la striscia di pasta, fatte aderire i due strati intorno al ripieno facendo uscire l'aria. Ritagliate i ravioli con l'apposito attrezzo o con una rotellina. Cuoceteli in abbondante acqua salata (1-2 minuti circa). Scolateli e saltateli in una padella con burro e salvia.
Distribuiteli nei piati e guarnite con il caramello di aceto balsamico* versato a filo, parmigiano grattugiato e l'erba cipollina tagliata finemente.
*In un pentolino, a fuoco medio, sciogliete lo zucchero e glucosio con un cucchiaio d'acqua. Aggiungete l'aceto balsamico e fatte ridurre della metà.
Raffreddandosi questo caramello diventerà duro, basta riscaldarlo un po' per farlo tornare liquido.
I ravioli che mi sono avanzati ho messo nel congelatore per un'altra volta.

RAVIOLI SA SIROM I KRUŠKAMA I KARAMELIZIRANIM BALZAMIČNIM OCTOM


Prekrasna kombinacija sira i krušaka nadopunjena balzamičnim octom, u savršenom omotu domaće tjestenine. Trebate li još nešto? Čašu dobrog vina i uživajte.


Tijesto:
  • 3 jaja
  • 300 g brašna
Nadjev:
  • 250 g svježeg kravljeg ili ovčjeg sira
  • 50 g ribanog tvrdog ovčjeg sira
  • 1 kruška
  • 2 žlice crnog vina
  • 1 žličica maslaca
  • sol, papar, muškatni oraščić
  • prstohvat šećera
Karamelizirani balzamični ocat:
  • 30 g šećera
  • 10 g glukoze
  • 60 g balzamičnog octa
  • 1 žlica vode
+
  • 60 g maslaca
  • 3-4 lista žalfije
  • naribani parmezan
  • nekoliko listova vlasca


Zamijesite tijesto od jaja i brašna. Omotajte plastičnom folijom i ostavite da odmara 1 sat.


Za nadjev pomiješajte dobro ocijeđeni svježi sir s krupnije naribanim ovčjim sirom.
Kruške ogulite, uklonite sjemenke, narežite na kockice, pa dinstajte sa žličicom maslaca na srednje jakoj vatri.
Dodajte vino i pojačajte temperaturu, pustite da vino ispari.
Dodajte šećer, sol, svježe mljeveni papar, po želji naribanog muškatnog oraščića.
Umiješajte kruške u sir, kušajte i po potrebi dodajte još soli.
Uzimajte malu količinu tijesta, prvo je malo valjkom razvaljajte na pobrašnjenoj dasci, a dalje rastanjite na stroju za tijestu do pretposljednje točke (na mojoj je to 6 od 7).
Nastojte dobiti trake širine 8 cm.
Žličicom ili uz pomoć vrećice za ukrašavanje nanesite hrpice smjese sira i krušaka na tijesto, na razmaku od dva prsta jedna od druge. Preklopite, pritišćući lagano prstima oko nadjeva istisnite zrak, narežite četvrtaste raviole i dobro stisnite rubove.
Gotove raviole slažite na pobrašnjeni kartonski pladanj. Ponavljajte postpak s ostatkom tijesta.
Kuhajte raviole u puno ključale, slane vode – dovoljna je minuta ili dvije.
U tavi zagrijte 2 žlice maslaca s nekoliko listova žalfije, dodajte kuhane raviole i pažljivo ih miješajte da se ne raspadnu.
Rasporedite u tanjure, dopunite karameliziranim balzamičnim octom*, ribanim parmezanom i sitno narezanim vlascem.


*U manjem lončiću zagrijavajte vodu, šećer i glukozu. Dodajte balzamični ocat i kuhajte na laganoj vatri dok se količina ne upolovi. Ako se smjesa stisne prije posluživanja, jednostavno je malo zagrijte i postat će opet tečna.

  5. This is a flavor combination I never would have thought of. I love your ravioli cutter. I've never seen one like that. My grandmother used a little roller. I loved that she used to take the scraps and make a delicious soup with them. She's gone three years tomorrow and this really made me think of her. What a great recipe!
