GUMPASTE - recipe and instructions



And here's my second, amateur tutorial in cake decorating, regarding the Gumpaste this time.
Again, all this information was passed to me by DD, and this tutorial won't be even nearly detailed or documented by detailed photographs as hers (I will hopefully add more pictures once I get so confident when working with gumpaste that I can take my camera and photograph every step). Yeah, it's quite tricky working with it, both times I used it I got so carried away, my concentration on maximum level, that only at the end I realised what a small number of pictures I had taken.
However, the pictures do help (therefore check DD's tutorials on Gumpaste and MMF), but you will need a lot of practice before you get hold of all the "knowledge" and let it show in your work. That much I can tell you for sure.
Like I said in one my previous posts, I'm pretty much "last minute person". I know I don't give myself enough time to work things out in my head. So when I made the gumpaste decorations for my Happy Clowns Cake, I was determined to start on time... although I had only one week at my disposal. I prepared the gumpaste and the fondant during the weekend, let them rest for a day or two, and then started making the clown figurines the following Monday. With all the fuss going on continuously in and around my kitchen (kids!?!? they have to touch everything, ask thousad questions - What's this/that? What are you making now? Why don't you make a yellow clown instead of the green one? Why did you prepare orange colour if you're not using it? Is it dry yet? Can I touch it? ) I managed to prepare everything by Thursday, then baked the cake on Friday (that was tricky, too. My younger daughter (Sara, 2-year-old) decided she wanted to eat it right out of the oven, so I was running around the kitchen with the cake in my hand and she was crying and jumping all around me. I'm not joking here, this was a real scene), and then finally covered it with the fondant and placed the decorations on it on Saturday.
So, here's a small piece of advice. Choose a quiet moment to start working with the gumpaste. Unlike the Marshmallow fondant, it will dry very quickly if left unattended even within few minutes. So don't get distracted, or you'll get poor looking objects (check out the violet clown's right leg).
Good, if you're ready, let's get down to the recipe. If you have any questions, note them and I'll pass them to DD :)))))

USE: Unlike the Marshmallow fondant, gumpaste is not used for covering cakes. One because it's not so tasty, two, because it dries quickly and gets hard once it's completely dry. It is, however, used for making various decorations that need to keep their shape well, for example flowers, people, animals, various objects and parts of a cake that need to hold a shape (there are some very nice examples on DD's blog).

GUMPASTE
(ingredients and instructions)

1 tablespoon Gum-tex (or Tylose powder or tragacanth gum)
1 tablespoon glucose
3-4 tablespoons warm water
1 tablespoon vanilla or lemon extract
450 g powdered sugar
shortening (for covering)
plastic wrap and a freezer bag

Mix about 3/4 of the sifted powdered sugar and Gum-tex together into a large bowl.
Set aside.


Mix warm water and glucose until dissolved. Add the extract.

Add the liquid mixture to the powdered sugar/Gumtex mixture and using a strong spatula try mixing the two as well as you can. It won't be easy.

Turn the mixture onto a surface lightly dusted with powdered sugar and begin kneading it.

Continue adding the rest of the powdered sugar, small amounts at a time, until you get a non-sticky workable dough that is pliable but holds it's shape.

Let gumpaste sit at room temperature for at least one day before using. This allows the chemicals to bond and dissolves the grainy powder.
If you already know what you are making and what colours you'll need, you can colour the portions of the dough immediately, otherwise store it uncoloured.

Use gel/paste type food colours to colour the gumpaste. Knead in a small almount at a time. Keep some more powdered sugar near, in case you add too much colour or the dough gets too sticky.
Always keep the unused gumpaste covered while working to prevent it from drying out. You can use cornstarch, powdered sugar or a mixture of both, or a greased surface to roll it out on.
Storing: rub a bit of vegetable shortening all over gumpaste, wrap in plastic wrap, and place in a freezer bag. Store in the pantry at room temperature. Do not store in the refrigerator. If you're storing different portions of coloured dough, wrap each separety.

Marshmallow fondanta, pri izradi dekoracija za torte koristi se još jedna smjesa - zove se Gumpaste (gumena pasta) zbog jednog od glavnih sastojaka, gume, koja služi da učini ovu smjesu pogodnom za izradu figurica i predmeta a da pri tom zadrže dobro željeni oblik). Za razliku od fondanta, gumpaste nije pogodan za prekrivanje torti - prvo zato što nije tako ukusan (okus gume nije baš idealan), a drugo zato što se brzo suši i kad je suh postane doista tvrd. Dakle, bilo bi, kao prvo teško razvući ga i prekriti njime tortu, a da pri tom ne ispuca, a s druge strane bilo bi teško rezati tortu, i sigurno biste taj dio odbacili/ostavili na tanjuru.
Čemu onda služi gumpaste? Prvenstveno za izradu cvjetova, mašnica, figurica ljudi i životinja, itd. Sve te ukrase treba izraditi 3-4 dana ranije, ostaviti ih da se dobro osuše prije nego njima ukrasite tortu. Kad se jedanput osuše, mogu trajati godinama (pažljivo jer su jako krhki, i slomi će se ako njima ne rukujete pažljivo). Mogućnosti su doista beskonačne, dovoljne je kružiti malo po netu ili you-tube i vidjet ćete bezbroj kreacija, od cipela na torti, do raznih dijelova torte, na primjer kopča i ručka na torti-torbici, ili kao mog Winnieja ili klauna.
Kad prvi put radite s gumpastom vjerojatno će vam biti neobično i možete naići i na poteškoće, potrebno je dosta vježbe, nemojte se obeshrabriti. Ali u biti je kao igrati se s plastelinom, i doista može biti zabavno.

Recept za gumpaste:

1 žlica Gum-texa (ili Tylose praha, ili gume iz tragacantha)
1 žlica tekuće glukoze
3-4 žlice tople vode
1 žlica ekstrakta vanilije ili limuna
450 g mljevenog šećera
biljni mrs (za omazivanje gotove smjese)
plastična vrećica za zamrzivač


Pomiješajte 3/4 prosijanog šećera i Gum-tex u zdjeli.
Dodajte glukozu u toplu vodu i miješajte dok se ne rastopi. Umiješajte ekstrakt.
Umiješajte tekućinu u mješavinu šećera i Gum-texa. Miješajte čvrstom spatulom koliko je moguće da se sastojci donekle povežu.
Istresite na radnu površinu posutu mljevenim šećerom i mijesite dodajući postepeno ostatak šećera dok ne dobijete tijesto koje se više ne lijepi, i dovoljno je čvrsto da zadrži oblik.
Omažite tankim slojem biljnog mrsa, omotajte plastičnom prozirnom folijom, pa stavite u plastičnu vrećicu, istisnite zrak i čvrsto zatvorite.
Ostavite Gumpaste da odmara barem jedan dan prije upotrebe. To će pomoći da se kemikalije povežu i da se šećer rastopi.
Čuvajte na sobnoj temperaturi, NE u hladnjaku.
Ako već imate zamisao što ćete raditi i znate koje će vam boje trebati, možete tijesto odmah obojiti, omotati svaki dio zasebno, i tako ih čuvati do upotrebe. Obojite potrebnu količinu smjese bojama u gelu ili pasti, dodajući po malo, čačkalicom, i svaki put dobro izmijesite da se boja ujednači (nakon što obojeno tijesto odstoji, boje postanu intenzivnije, stoga ne pretjerujte). Imajte uvijek pri ruci šećera u prahu, za slučaj da dodate previše boje ili da tijesto postane ljepljivo. Pri izradi tamnijih boja, treba dodati dosta boje, pa može postati prilično mrljavo, dakle zaštite radnu površinu ili koristite plastičnu dasku kao podlogu za rad. Uvijek čuvajte smjesu koju trenutno ne koristite omotanu plastičnom folijom da se ne osuši.
Čuva se na sobnoj temperature nekoliko mjeseci. Normalno je da tijekom tog razdoblja malo očvrsne. Jednostavno smjesu zagrijte rukama, zatim mijesite da postane pogodna za rad.
Kad se figurice osuše, postanu tvrde i čvrste (ali lako lomljive, stoga budite pažljivi) i možete ih sačuvati za uspomenu.
Ukrase za tortu pripremite uvijek nekoliko dana unaprijed da se dobro osuše.
Pri izradi figurica i ukrasa bit će vam potreban i poseban pribor, a pripremite i nekoliko komada polistirola koji prekrijte prozirnom folijom.

Gum-tex (proizvodi Wilton) smjesa je koja pomaže pri stabiliziranju i emulizioniranju smjese (slične smjese su Tylose prah i guma od tragacantha - obje vrste prirodne gume i mogu se koristiti kao zamjena za Gum-tex u bilo kojem receptu za gumpaste).

GUMPASTE

Come promesso, ecco anche la seconda ricetta nella serie che riguarda decorazioni. La prima (se per caso non ricordate) era la ricetta per il
fondente di marshmallow (MMF).
Questa pasta è completamente diversa dal fondente, in quanto non può essere usata per ricoprire le torte. Si usa esclusivamente per fare le decorazioni come fiori, nastri, figurine (persone o animali), e svariati oggetti.
Io non ho ancora nella mia collezione molto da dimostrarvi ma se guardate in giro su Internet oppure sul blog che vi ho indicato anche altre volte (
DDpie's Slice), potete farvi un'idea. Le mie creazioni finora sono state le figurine di Winnie the Pooh (e i fiorellini semplici sulla stessa torta), e poi i tre clown.
Perché non si può usare la pasta di gomma per ricoprire le torte? Innanzitutto, perché la presenza della gomma la rende molto meno appetitosa rispetto il fondente di marshmallow (che pur essendo molto dolce per i miei gusti e buono da mangiare), e poi perché si asciuga molto velocemente (in giro di pochi minuti) e per questo sarebbe difficile stenderla e ricoprire la torta. E sopratutto perché una volta asciutta, la gumpaste diventa dura, veramente dura. Le figurine però fatte con essa possono conservarsi a lungo senza cambiare la loro forma (un po' difficile se fatto con il fondente).
Oltre a pochi ingredienti necessari per preparare questa pasta, avrete bisogno anche di alcuni attrezzi per modellare gli oggetti e i colori in pasta o gel. Ci sono anche altre cose che potrebbero servirvi, dipende da quello che volete fare.

Gumpaste (pasta di gomma):

1 cucchiaio di Gum-tex
1 cucchiaio di glucosio
3-4 cucchiai di acqua calda
1 cucchiaio di estratto di vaniglia
450 g di zucchero a velo
*margarina
*pellicola alimentare e una bustina per il freezer


In una ciotola mescolate ¾ di zucchero setacciato e il Gum-tex.
Sciogliete il glucosio nell'acqua calda. Aggiungete l'estratto e poi unite il liquido allo zucchero. Mescolate con una spatola dura cercando di incorporare tutto lo zucchero.
Cospargete con lo zucchero una spianatoia e continuate a impastare con le mani aggiungendo man mano il resto dello zucchero fino a ottenere una pasta non più appiccicosa e che mantiene forma.
Formate una pallina, spalmate la superficie con un po' di margarina, avvolgetela nella pellicola, e poi mettetela nella bustina e chiudetela bene.
Lasciate riposare la Gumpaste almeno un giorno prima di usarla.
Conservatela nella dispensa, a temperatura ambiente, non in frigo.
Se avete già l'idea che colori e la quantità di pasta vi serviranno dopo, potete colorarla subito dopo averla preparata, avvolgere ogni colore separatamente e conservarlo per dopo. Lasciate in ogni caso un po' di pasta non colorata, in caso vi serve il colore neutro oppure vi serve altra pasta del colore che state usando.
Colorate la pasta con i colori in gel o pasta (aggiungendoli un po' alla volta con uno stuzzicadenti). Tenete sempre a portata di mano altro zucchero a velo in caso dovreste aggiungere troppo colore oppure la pasta dovesse diventare appiccicosa.
Non esagerate con la quantità di colore, perché dopo il riposo, i colori diventano più intensi.
Durante la lavorazione, tenete la pasta che non state usando sempre coperta con la pellicola.
È normale che la pasta di gomma diventi dura durante la conservazione. Per farla tornare morbida, scaldate un pezzo alla volta tra le mani e poi lavorate un po' e tornerà morbida. Non riscaldatela nel microonde.
Preparate sempre gli oggetti e le figurine con 3-4 giorni di anticipo perché devono asciugarsi bene.

  3. Cinzietta, penso che tu voglia provare la ricetta di Edna, vero?
    1 cup (tazza) corrisponde al volume di 235 ml. Un cucchiaio (tablespoon) non è il nostro cucchiaio da tavola ma il misurino (come quello nella foto dove sto aggiungendo il glucosio) e misura 15 ml.
    è difficile misurare con precisione in cups perché a volte c'entra di più a volte di meno (come peso), non premere per riempire il misurino. Quindi regola ti più con il buon senso fino a raggiungere la consistenza desiderata.

    Nella ricetta originale c'è scritto 1 pound (circa 4 cups)= circa 450 g (io mi fido sempre di più del peso).

  6. I wanted to tell you, you can mix the gumpaste and the fondant half and half, it won't dry out as fast, but will still be more rigid than just fondant. The other thing is, girl, make up some extra fondant (or keep leftovers on hand) and let the girls play with that while you do your cake!
