Red lentils, carrot and leek soup with quinoa

Two out of three kids in my house love soups. And one of the three of them loves quinoa. The youngest and the most gourmet of the three, of course. My daughter once asked me if I fed them quinoa, too, when she and her sister were little. And I said I didn't, simply because at the time I didn't even know quinoa existed. And she concluded saying, Ok, no wonder then we don't like it now ^_^
The little gourmet instead loves the quinoa probably (shhhhh! don't tell his father) more then pasta. And he loves vegetables and legumes. So it's really easy to serve him a delicious and nutricious meal like this.
And since rain puts me into sleepy and heavy mood, I cannot but agree that a bowl of warm soup is the best thing that can happen to you. Don't get me wrong, but I prefer it even to a piece of chocolate on some days.
Well, it's up to you, whether you'll try this or not, whether you'll like it or not. I know I need to go buy more lentils, because we need to have some more. To feel warm. To fill up the energy tank (me, not the kid, he's already bursting with energy).

Red lentils, carrot and leek soup with quinoa

Ingredients (for 4 servings):
* 150 g red lentils
* 2 carrots
* 1 potato
* 1 leek
* extra virgin olive oil
* about 1 liter of vegetable stock (or hot water)
* 1/2 teaspoon coriander seeds
* salt and pepper
* parsley leaves
* 1/2 cup (120 ml)  quinoa 

Slice the leek and let it sweat for a few minutes with 2 or 3 TBspoons of extra virgin olive oil, until soft.
Add the carrots and potato, diced, and cook stirring for a couple minutes.
Add the rinsed red lentils and the vegetable stock (or hot water), enough to cover all the vegetables by at least 2 or 3 cm.
Bring to a boil, then lower the heat to medium-low, and cook covered for 20-30 minutes or until the vegetables are soft.
Using a stick blender, partially puree the soup, just enough to make it a little creamy.
Season with salt and pepper to your taste, add the finely crushed coriander seeds.
If you prefer the soup to be more thicker, continue cooking for a few more minutes uncovered. If you prefer it more liquid, add a bit more vegetable stock to reach the desired consistency.
In the meantime, cook the quinoa. Put the quinoa in a fine mesh sieve and rinse well under cold running water. Then put it in a medium sauce pan with slightly salted water (1/2 C quinoa + 1 C water). Once the water starts boiling, reduce the heat to low, and cook covered until all the liquid has been absorbed.
Leave it in the saucepan, covered until serving.
Divide the soup between four soup bowls. Add a couple spoonfulls of quinoa to each and sprinkle with finely chopped parsley.

* you can also add a little freshly squeezed lemon juice or finely grated ginger root to the soup.
* I used caramelized carrots  for garnish: first sliced them lengthwise with a vegetable peeler, put them in a skillet with a little brown sugar, butter and vegetable stock. Cooked until they were soft and all the liquid absorbed.

Zuppa di lenticchie rosse, carote  e porri con quinoa

Ingredienti (per 4 persone):
* 150 g di lenticchie rosse
* 2 carote
* 1 patata
* 1 porro
* olio extravergine di oliva
* circa 1 l di brodo di verdure (oppure acqua calda)
* 1/2 cucchiaino di semi di coriandolo
* sale e pepe
* prezzemolo
* 1/2 tazza (120 ml)  di quinoa

Soffriggete sul fuoco basso il porro sminuzzato con con 2-3 cucchiai di olio per qualche minuto.
Aggiungete le carote e la patata tagliati a dadini e fate insaporire per un paio di minuti mescolando.
Unite le lenticchie rosse, ben sciacquate, e il brodo sufficiente per coprire le verdure e le lenticchie per almeno 2 o 3 cm.
Portate a bollore, abbassate la fiamma a medio-bassa, e lasciate cuocere per 20-30 minuti, o finché le verdure siano cotte.
Frullate brevemente (e parzialmente) con un frullatore a immersione, giusto per renderla un po' più cremosa.
Aggiustate di sale e pepe, aggiungete i semi di coriandolo tritati. Regolate la densità della zuppa: se vi piace più densa, fatela cuocere ancora per qualche minuto a pentola scoperta, mescolando spesso. Se vi piace più liquida aggiungete altro brodo e fate cuocere brevemente.
Nel frattempo cuocete la quinoa. Mettetela in un colino a maglie fitte e sciacquate bene sotto l'acqua corrente (fredda). Mettetela a cuocere in un pentolino con l'acqua leggermente salata (1/2 tazza di quinoa + 1 tazza di acqua). Quando l'acqua inizia a bollire, abbassate la fiamma e lasciate cuocere fino a completo assorbimento dell'acqua. Spegnette, e lasciate nel pentolino coperto fino al momento di servire la zuppa.
Distribuite la zuppa nei piatti, aggiungete un paio di cucchiai di quinoa e cospargete con il prezzemolo tritato.

* per variare, potete aggiungere un po' di succo di limone o, se vi piace, un po' di radice di zenzero grattugiata nella zuppa.
* ho usato carote caramellate per decorare la zuppa: ho tagliato le carote nel senso di lunghezza con un pelapatate. Messe in una padella con un po' di zucchero di canna, un po' di burro e brodo vegetale. Cotte fino a farle diventare morbide facendo assorbire tutto il liquido.

Gusta juha od crvene leće, mrkve i poriluka s quinoom

Sastojci (za 4 osobe):
* 150 g crvene leće
* 2 mrkve
* 1 krumpir
* 1 poriluk
* ekstradjevičansko maslinovo ulje
* oko 1 l povrtnog temeljca (ili tople vode)
* 1/2 žličice sjemenki korijandera
* sol, papar
* peršin
* 1/2 šalice (120 ml)  quinoe

Nasjeckajte poriluk i pirjajte ga na tihoj vatri s 2 do 3 žlice maslinovog ulja.
Kad poriluk omekša, dodajte na kockice nasjeckanu mrkvu i krumpir pa pirjajte skupa par minuta.
Dodajte dobro ispranu crvenu leću, zalijte temeljcem (ili toplom vodom) tako da sve bude dobro pokriveno (barem 2-3 cm iznad povrća i leće). Pojačajte vatru dok voda ne provrije, zatim smanjite na srednje jaku i kuhajte polupoklopljeno oko 20-30 minuta, odnosno dok povrće nije kuhano.
Kuhanu juhu kratko i djelomično smiksajte štapnim mikserom, neka većina povrća ostane u komadićima, miksanjem je učinite djelomično kremastom.
Posolite i popaprite po ukusu, dodajte u mužaru smrvljene sjemenke korijandera.
Podesite gustoću juhe po svom ukusu: ako je volite rjeđu dodajte još temeljca i kratko prokuhajte, ako je volite gušću kuhajte još kratko na laganoj vatri, miješajući, do željene gustoće.
U međuvremenu skuhajte quinou: stavite je u veće gusto mrežasto cjedilo i isperite pod mlazom hladne vode.
Stavite kuhati quinou s dvostrukom količinom vode (1/2 šalice quinoe + 1 šalica vode), malo posoljene, na tihoj vatri, dok sva voda ne bude ispari odnosno bude upijena. Maknite s vatre, rastresite vilicom,  i ostavite poklopljeno do posluživanja.
Juhu rasporedite u tanjure, dodajte u svaki par žlica kuhane quinoe, pospite sitno nasjeckanim peršinom.

*U juhu možete dodati i malo soka limuna (kad je već kuhana) ili ako volite, naribani korijen đumbira koji se također odlično slaže s mrkvom i lećom.
*za ukras sam koristila karamelizirane mrkvice, koje sam prvo narezala po dužini nožićem za guljenje povrća, a zatim sam ih kuhala u tavi s malo smeđeg šećera, malo maslaca i povrtnog temeljca dok nisu omekšale i sav je temeljac ispario.

  1. Un bimbo così piccolo che mangia frutta, verdura e anche quinoa è una specie di miracolo. Sarà anche un po' iperattivo ma almeno non ti fa morire quando deve mangiare. Ed è dura quando non riesci a far mangiare nulla ai bimbi...avessero la fame che ho io!
