Those lovely tarts



And here you go. The secret revealed. This is the recipe I needed the puff pastry for.
I saw them in a book I bought this month and couldn't get my eyes off them, kept going back to the same page over and over again. Couldn't wait to make them.
Very often I get pretty disappointed in cases like this, but not this time. No. They were exactly as I imagined them. Gorgeous. The orange and cinnamon flavoured pineapple as a filling was even tastier than I expected.
This was actually the very first time I used pineapples in baked goods.
My only regret is that I didn't have any ice cream while I was eating the first one, still warm... that would have been heaven indeed.



Puffed Pineapple tarts

Dough:
200 g flour
100 g sugar
125 g butter
3 egg yolks
1 lemon (finely grated zest)

Other ingredients:
250 g puffed pastry
1/2 fresh pineapple
2 oranges
ground cinnamon
2 TBspoons brown sugar
a little butter (for brushing)

First of all, you may use the premade puff pastry or you can make the Cream Cheese Puff pastry as I did. In that case plan to prepare it at least a day ahead.

If you’re using the premade puff pastry, then the first thing to prepare is the dough for the tarts.
Sift the flour, mix it with the sugar and the finely grated lemon zest. Rub in the chopped butter at room temperature until you have coarse crumbs.
Add the egg yolk and bring everything together (do not knead a lot, just enough to get smooth, homogeneous dough). The dough is pretty soft.

Wrap it in a piece of plastic wrap and refrigerate for 1 hour.
Clean the pineapple – remove the skin and the hard central part. Cut the flesh into cubes.
Squeeze the juice from both oranges, put it in a saucepan with 2 TBspoons of brown sugar and the cinnamon (the quantity depends on how much you like it – I put two generous pinches, or so). Bring the juice to boil, remove from heat and add the chopped pineapple. Let it macerate for 1 hour.


Prepare six 10-cm mini tart pans (no need to butter or flour them).
Divide the dough in six parts and roll them out between two sheets of baking paper and line the tart pans, covering the bottom and the sides. Trim the excess dough.
Fill the tart shells with pineapples.
Roll the puff pastry out very thin (2-3 mm) and cut out 6 circles the same diameter as the tart pans.
Place the circles over the filling and seal the edges of the two doughs.
Cut a few parallel lines in the puff pastry before or after covering the tarts – these serve as vents, so that the steam can come out.

Brush the tarts with a little melted butter and sprinkle with sugar (if you want).

Bake the tarts for about 30 minutes in an oven preheated to 190°C.
Let them cool in the pans and then remove them carefully.

Serve the tarts sprinkled with powdered sugar and ground cinnamon.



Tortine sfogliate all’ananas

Pasta frolla:
200 g farina
100 g zucchero
125 g burro
3 tuorli
1 limone(solo la scorza)

Altri ingredienti:
250 g pasta sfoglia (ho usato la sfoglia al formaggio)
1/2 ananas fresco
2 arance
canella in polvere
2 cucchiai di zucchero di canna
un po’ di burro (per spennellare le tortine)

Per la frolla, setacciate la farina, mescolatela con lo zucchero e la scorza grattugiata di limone.
Aggiungete il burro ammorbidito e lavorate con le punte delle dita per ottenere delle briciole. Unite i tuorli e impastate tutto brevemente per formare una pasta liscia e morbida.
Avvolgetela nella pellicola e lasciatela riposare in frigo per 1 ora.

Eliminate la buccia e il cuore duro all’ananas e tagliatelo a dadini.
Spremete il succo di due arance, filtratelo e mettetelo in una casseruola con lo zucchero e la cannella (a piacere). Portate il succo a ebollizione, toglietelo dal fuoco e aggiungete l’ananas. Lasciatelo macerare per 1 ora.
Dividete la frolla in 6 parti, stendeteli e foderate 6 stampini per tartellette da 10 cm.
Distribuite l’ananas sul fondo.
Stendete la sfoglia molto sottile, tagliate 6 cerchietti (da 10 cm) e coprite le tartellette facendo aderire la frolla alla sfoglia. Incidete la sfoglia per permettere al vapore di uscire durante la cottura.
Spennellate le tortine con un po’ di burro fuso, cospargete con lo zucchero e infornate per circa 30 minuti a 190°C.
Lasciatele raffreddare nei stampini e poi sformate con delicatezza e servitele spolverizzate con lo zucchero a velo e la cannella.



Kasnim, kasnim, znam da kasnim, kao zec u Alisi u zemlji čudesa, ali manje više je uvijek tako.
Mislila sam stići barem doslovce u pet do dvanaest... mogu barem slagati da mi je stao sat... Trčim cijeli dan, a nikamo ne stižem.
Ili vam ispričati kako se moja Franci danas sudarila s dečkićem u vrtiću i izgubila zubić koji se već klimao, a rasklimao se usred udara i drugi kojem još nije bio red, a sutra ujutro ćemo vidjeti kad je odvedem zubaru ima li štete na onom stalnom koji je već iznikao. Kad sam otišla po nju u vrtić bila sva jadnica uplašena zbog krvi, usne i desni natečene, ali se pokušala našaliti na svoj račun - kaže sad priča kao njen djedo kad izvadi zubnu protezu.
Kako je kraj mjeseca i kraj teme ANANAS u igri Ajme koliko nas je, koju je osmislila Monsoon s bloga Dalmacija Down Under, a ovaj mjesec nas je ugostila Branka, htjela sam u ljepoti završiti s još jednim receptom na ovu temu. Jednim od mnogih koje sam htjela pripremiti ali jednostavno nisam stigla.
Stoga nadam se da neću Branki pobrkati raspored.
Ujedno joj se želim zahvaliti što je odlučila štafetu domaćice proslijediti meni, pa se pripremite na novi zadatak.

Prhko lisnate tortice s ananasom

Prhko tijesto:
200 g brašna
100 g šećera
125 g maslaca
3 žumanjka
1 limun (naribana korica)

ostali sastojci:
250 g lisnatog tijesta (ja sam koristila lisnato s krem sirom)
1/2 svježeg ananasa
2 naranče
mljeveni cimet
2 žlice smeđeg šećera
malo maslaca

Prhko tijesto
Prosijte brašno na radnu površinu, pomiješajte ga sa šećerom i sitno naribanom koricom limuna.
Dodajte maslac sobne temperature narezan na komadiće pa miješajte vršcima prstiju s brašnom da dobijete krupnije mrvice.
Dodajte žumanjke i povežite sve u glatko tijesto (ne mijesite puno, tek toliko da se sve ujednači). Tijesto je prilično mekano.
Omotajte ga prozirnom folijom i stavite u hladnjak na 1 sat.

Priprema tortica – dobit ćete 6 tortica promjera 10 cm:

Očistite ananas – ogulite koru i izvadite središnji, tvrdi dio. Narežite ga na kockice.
Iscijedite sok naranči, procijedite ga kroz gusto cjedilo. Dodajte mu šećer i cimeta po želji (ja sam stavila otprilike 2 prstohvata). Zagrijavajte dok ne prokuha. Prelijte sok preko ananasa i ostavite da se marinira 1 sat.
Podijelite prhko tijesto na 6 jednakih dijelova. Svaki razvaljajte između dva komada papira za pečenje (na 3-4 mm debljine) i utisnite u kalupiće tako da tijesto pokrije dno i stranice. Odrežite višak tijesta.
Rasporedite na tijesto ocijeđeni ananas.
Od tanko razvaljanog lisnatog tijesta narežite šest krugova promjera kao i kalupi. Njima pokrijte nadjev i stisnite rubove dva tijesta (prhkog i lisnatog).
Nožem zarežite paralelne crte na lisnatom tijestu da može izlaziti para tijekom pečenja.
Premažite tortice s malo rastopljenog maslaca, pospite s malo šećera i pecite oko 30 minuta na 190°C.
Ostavite tortice da se ohlade u kalupima, a onda ih pažljivo izvadite i pospite šećerom u prahu i mljevenim cimetom.

  9. Odlična pita , volim ovakve stvari. Kod tebe kao i uvijek odlična kombinacija sastojaka i super izvedba.
    Što se rasporeda tiče nisi ništa pobrkala, sve smo stigle i hvala ti na još jednoj ulaznici u ananas-krug igrice.
    Za Franci i njezin zubić mi je žao, ali odlična je onda kada se i šali na svoj račun, proći će to brzo i biti će sve ok :)

  11. Prvp zubić! Vjerujem da je tebe boljelo više nego nju, jer je moja Timna prošlo ljeto roneći uspjela okrhnuti zub udarivši u pješčano dno i ja sam htjela poludjeti, jer je kod nje naravno bila riječ o trajnom i to prednjem zubu, ali ajde pokrpali smo ga.
    Recept mi je mrak, odlična ideja kombinacija ova dva tijesta i svakako ću isprobati. Sa ananasom kao nadjevom stvarno mi je odmah krenula voda na usta! Fenomenalno!
