Christmas baking - part 2



So, the Gingerbread house was the first step in my Christmas baking. And I'm really getting exciting as I've gathered quite a few new recipes along with those I've been baking for years.
Although these cookies were risking a lot at some point (*see the note) I managed to save them, and I'm so happy for that. Hope that's a good sign for the rest of the baking I have on my mind.
Now, to the cookies.
When I bought the book "Il libro d'oro dei biscotti", and looked through all those wonderful recipes, I kept skipping this one, because I'm not really fond of marzipan.
Then at some point, I got curious and read the recipe to see "how they were filled with marzipan". Seeing the ingredients in the filling I thought that the recipe could actually be really good and decided to give them a try.
You have no idea how positively I was surprised when I bit the first cookie. The dough is so soft and flavourful, and the filling is wonderful.
I guess I won't be running away from marzipan cookies any more.


MARZIPAN FILLED PINWHEEL COOKIES

Dough:
350 g flour
1 teaspoon ground ginger
2 teaspoons baking soda
250 g honey
140 g sugar
200 g ground almonds
4 egg yolks
a pinch of salt

Marzipan filling:

200 g marzipan
240 g red currants jam
100 g finely ground almonds
50 g grated lemon zest
chocolate glaze

Put the honey and sugar in a saucepan and warm up stirring on low heat just until the sugar has melted. Let it cool for 5 minutes.
Sift together the flour, the baking soda, the ginger and the salt, mix in the ground almonds as well.
Add the honey/sugar mixture and start mixing with a wooden spoon.


Add the yolks one at a time and knead the dough until homogenous.

Form a ball, wrap it in a piece of plastic wrap and let rest at room temperature for 1-2 hours.
For the filling, mix well the marzipan and jam.


Add the ground almonds and the lemon zest.

Divide the dough in two parts and roll each out to 1/2 cm thin (1/5"), cut the 30x15 cm (12x6") rectangles. Gather the scraps and roll out again.

Spread the marzipan filling evenly over the dough.

Carefully roll the dough yellyroll style (I did it starting from the longer side of the rectangle, if you want bigger cookies start rolling from the shorter side).

With a sharp knife, cut 1 cm wide slices and place them on a baking sheet.

Bake in an oven preheated to 180°C for about 10 minutes or until just golden.
When you take them out of the oven they will be very soft, so leave them to cool on the baking sheet for about 5-10 minutes and then move them to a cooling rack.
Decorate with chocolate glaze,

although I think they are prettier without.



NOTES: There were no eggs in the recipe, but at the stage where I was supposed to form the dough I realised there was something missing in the recipe (I read and re-read the recipe, but didn't find that missing ingredient and had to act quickly). So, I realised that without butter or eggs that dough would never come together. Since I had some yolks ready to be used, I started adding them one at a time until I was able to form the dough. Bingo! They came out wonderful. Soft and flavourful.
There were also candied fruit in the dough (75 g) and dried red currants in the filling (90 g), but I omitted those. Leaving it to your choice. I like them better without those two ingredients.

Per tanto tempo ho ignorato tutto quello che conteneva il marzapane come ingrediente, e adesso che ho assaggiato questi biscotti, ho cambiato l'idea.
Sono morbidi, profumati, deliziosi. Semplicemente perfetti per il periodo natalizio.
E naturalmente, fatti appena in tempo per concludere la mia partecipazione alla
raccolta di Micaela.


BISCOTTI RIPIENI DI MARZAPANE
(da "Il libro d'oro dei biscotti")

Pasta:
350 g farina
1 cucchiaino di zenzero
2 cucchiaini di bicarbonato
250 g miele
140 g zucchero
200 g mandorle macinate
4 tuorli
un pizzico di sale

Ripieno di marzapane:

200 g marzapane
240 g marmellata di ribes rossi
100 g mandorle tritate
50 g scorza di limone tritata
glassa al cioccolato

Mettete lo zucchero e il miele in un tegamino e scaldate mescolando a fuoco basso finché lo zucchero si sarà sciolto. Lasciate raffreddare per 5 minuti.
Setacciate insieme la farina, il bicarbonato, lo zenzero e il sale in una terrina.
Unite le mandorle alla farina, versateci anche il miele con lo zucchero e lavorate con un cucchiaio di legno. Unite i tuorli, uno alla volta, impastate brevemente per formare una pasta omogenea.
Formate un panetto e lasciatelo riposare per un'ora o due, a temperatura ambiente, avvolto nella pellicola alimentare.
Per il ripieno, sbriciolate il marzapane in una ciotola, aggiungete la marmellata e amalgamate bene (ho usato prima la forchetta e poi la frusta). Unite le mandorle e la scorza di limone grattugiata.
Dividete la pasta in due rotolini uguali. Stendete ciascun rotolino su una superficie infarinata (o come me su un pezzo di carta da forno) allo spessore di 5 mm, e ritagliate i rettangoli da 30x15 cm. Raccogliete i ritagli e stendeteli di nuovo.
Spalmate il ripieno di marzapane sui rettangoli di pasta e arrotolateli (io l'ho fatto partendo dal bordo più lungo, per i biscotti del diametro più grande partite dal bordo più corto).
Tagliate il rotolo a fette spesse 1 cm e trasferitele su una piastra ricoperta da carta da forno, a 2,5 cm una dall'altra.
Cuocete i biscotti nel forno preriscaldato a 180°C per circa 10 minuti o finché saranno dorati.
Appena tolti dal forno saranno molto morbidi, quindi lasciateli raffreddare un po' sulla piastra e poi trasferiteli su una griglia e lasciateli raffreddare completamente.
Decorate con la glassa di cioccolato (1 cucchiaino per ogni biscotto), anche se, secondo me, sono ancora più belli senza la glassa.

P.S.: La ricetta non prevedeva le uova, ma credetemi, era impossibile impastare perché era tutto troppo secco. Ho letto e riletto la ricetta, sicura che c'era qualcosa che mancava, e ho deciso che ci voleva o il burro o le uova per salvare quello che si poteva. Ho cominciato ad aggiungere un tuorlo per volta, e solo dopo il quarto sono riuscita ad ottenere una pasta omogenea, ma non troppo morbida.
La ricetta diceva anche di lasciare riposare la pasta per 2 giorni a temperatura ambiente, ma dopo aver aggiunto le uova, non volevo rischiare e ho aspettato circa un paio d'ore.
Nella ricetta c'erano anche dei canditi nell'impasto (75 g) e i ribes secchi nel ripieno (90 g) ma io ho omesso tutte e due perché non ci piacciono.

Nakon dosta nedoumica, e upornog preskakanja ovog recepta koji sam našla u knjizi "Il libro d'oro dei biscotti", nešto me je na kraju privuklo da recept napokon pročitam. Sve to stoga što marcipan nikad nije bio među meni omiljenim sastojcima. Tako sam ih napokon odlučila pripremiti, i moram reći da su me oduševili.
Priprema (kako se često događa s receptima iz knjiga iz časopisa) nije protekla sasvim glatko (*vidi bilješke), ali izvukla sam se uspješno.
Keksi su prekrasni. Okus medenjaka (može li Božić proći bez njih?) upotpunjen marcipanom i pekmezom od ribizli, mmmmmmmmmmm, mekani, mirisni, ukusni...

KEKSI PUNJENI MARCIPANOM

Tijesto:

350 g brašna
1 žličica đumbira
2 žličice sode bikarbone
250 g meda
140 g šećera
200 g mljevenih badema
4 žumanjka
prstohvat soli
Nadjev od marcipana

200 g marcipana
240 g pekmeza od ribizli
100 g fino mljevenih badema
50 g korice limuna
čokoladna glazura

Zagrijavajte med i šećer na niskoj temperaturi dok se šećer ne otopi.
Ostavite da se hladi 5 minuta.
Prosijte skupa brašno, đumbir, sodu bikarbonu i sol, pa umiješajte i bademe.
U smjesu suhih sastojaka dodajte med sa šećerom, miješajte drvenom kuhačom.
Dodajte žumanjke i umijesite sve sastojke u glatko tijesto.
Omotajte ga plastičnom folijom i ostavite na sobnoj temperaturi 1-2 sata.
Namrvite marcipan u zdjelu, dodajte pekmez pa dobro izradite (ja sam prvo vilicom a potom ručnom žicom). Umiješajte bademe i limunovu koricu.
Podijelite tijesto na dva dijela, pa svaki razvaljajte na 1/2 cm debljine.
Izrežite pravokutnike otprilike 15×30 cm. Sakupite ostatke pa opet razvaljajte.
Namažite smjesu od marcipana na tijesto. Smotajte u rolnice. Ja sam ih motala počevši od dulje stranice, ako želite veće kekse motajte od kraće stranice.
Narežite rolnice na kriške debljine 1cm i slažite ih u pleh obložen papirom za pečenje.
Pecite u pećnici zagrijanoj na 180°C 10-ak minuta, dok lagano ne porumene.
Kad ih izvadite iz pećnice bit će još dosta mekani, stoga ih ostavite na plehu desetak minuta, a onda ih premjestite na rešetku da se ohlade.
Na ohlađene kekse stavite po žličicu čokoladne glazure, kad se glazura osuši možete ih staviti u metalnu kutiju.

MOJE BILJEŠKE I IZMJENE: Recept je iz knjige “Il libro d’oro dei biscotti”, ali s nekoliko izmjena. U receptu nije bilo jaja, ali kako je tijesto bilo tako suho da se uopće nije moglo zamijesiti, pokušala sam ga povezati jajima, i tako sam dodajući jedan po jedan žumanjak spasila ono što je izgledalo kao da će završiti u kanti za smeće.
U receptu je bilo još i kandirano voće (75 g) u tijestu i suhe ribizle (90 g) u nadjevu, ali sam izbacila i jedno i drugo jer ih ne volimo. Tko voli neka doda.
Ako vam nadjev nije d
ovoljno sladak, dodajte koju žlicu mljevenog šećera, ovisi naravno o pekmezu koji koristite.

  6. Avevo comperato 2 pacchetti di marzapane, non sapevo più come adoperarlo, adesso loso.
    Una domanda: il marzapane in pacchetto solitamente bisogna lavorarlo con lo zucchero a velo, bisogna farlo anche qui?Aspetto risposta dato che vorrei farli, ho anche la marmellata di ribes, comperato nel negozio Svedese dell'Ikea...

  14. Im not sure if Ive ever had marzipan. Your cookies are beautiful. I like the looks of them without the chocolate (cuz you can see the pretty swirl) but I bet the chocolate adds great falvor!!
