Mamma, perché ti piace fare i dolci?


I was making Madeleines for the first time, and was all into the instructions afraid to do something wrong, when my daughter asked me, "Mom, why do you like baking so much?"

...what was I supposed to answer to a 5-year-old? That warm oven makes me happy? Not to mention the warm, sweet fragrances coming out of it. That all the mixing, kneading, rolling, whipping, creaming, etc. is a kind of anti-stress therapy? Or that I bake because I like eating what I've made with my own hands and admire everything I make as if it was something special, even when it's just a simple cookie. She probably wouldn't understand. I simply answered it's because I like it, full stop.

What would you answer if you were asked the same question?


Passing on to the recipe I was making in that moment. A couple of months ago I read a post about Madeleines and their hump written by Lydia on Tzatziki a colazione (I love the name of that blog, "tzatziki for breakfast" and they also have a lot of great recipes there). My mind was fixed for months on finding a  stamp for Madeleins and when I finally found it was on sale, too. Bought two, of course, they are mini or petit 9-madeleine silicone stamps.
I followed Lydia's recipe and instructions with only one change: I substituted honey with chocolate.
I observed them baking - at first they got flat, then a hump formed (Yeah!), then it erupted (?!?!).
Ohhhhh, that's not what was supposed to happen

At least I've tried making them right.


CHOCOLATE AND ORANGE MADELEINES
  • 125 g butter
  • 3 eggs
  • 125 g sugar
  • 2 teaspoons baking powder
  • 40 ml yogurt
  • 1 orange
  • 30 g dark chocolate
  • 30 g white chocolate
Melt the butter and put aside to cool.
Beat well the eggs and sugar with an electric mixer.
Add the yogurt, the grated zest of one orange, and the juice of half an orange. Delicately mix in the flour sifted together with the baking powder.
In the end add the melted butter in thin streak, mixing continuously.
I divided the batter in two and mixed the grated white chocolate in one half, and the grated dark chocolate in the other half. If you prefer only only white or only dark chocolate, double the quantity and add to the whole batter.

Cover the bowl(s) and keeep in the fridge over night, or at least several hours.
Preheat the oven to 240°C. When the oven is almost hot, scoop the batter into madeleine pan (don't bother with levelling it).

After a couple minutes a hump will form in the middle, and when the edges start browning slightly, the madeleines are done. To be sure, do the toothpick check.
My opinion: They were fine, soft and moist. However, they needed more flavour. Perhaps some vanilla extract, or more orange, some good honey, SOMETHING. I think I should have melted the chocolate first, too. I did like the ones with the white chocolate better. Francesca liked them a lot. So I'll be working on some new flavours and will let you know.
My other daughter didn't give me any feedback, she's been busy doing this (I could show you the original video of my daughter, but this is a bit funnier. She's not redhead, but the voice is almost the same):





MADELEINE S ČOKOLADOM I NARANČOM


Jednostavni su za napraviti. Možete im promijeniti okus po želji, dodati vaniliju ili med, na primjer. Krasni su uz kavu ili čaj.


  • 125 g maslaca
  • 3 jaja
  • 125 g šećera
  • 145 g brašna
  • 2 žličice praška za pecivo
  • 40 ml jogurta
  • 1 naranča
  • 30 g tamne čokolade
  • 30 g bijele čokolade
Na laganoj vatri istopite maslac.
Umutite cijela jaja sa šećerom.
Dodajte jogurt, sitno naribanu koricu cijele (neprskane) naranče i sok od jedne polovice, miješajući i dalje (ali polako) mikserom.
Umiješajte brašno prosijano s praškom za pecivo.
Na kraju dodajte maslac ulijevaći ga u tankom mlazu neprekidno miješajući.
Podijelite tijesto na dva jednaka dijela, pa u jedan dodajte naribanu (ili istopljenu) bijelu čokoladu, a drugu polovicu tamnu čokoladu (za kuhanje).
Poklopljeno držite u hladnjaku nekoliko sati, ili još bolje cijelu noć.
Zagrijte pećnicu na 230-240°C.
Kad je pećnica skoro zagrijana, napunite (namaštene i pobrašnjene)kalupiće za madeleine, samo stavite žličicom tijesto tijekom pečenja će se samo razliti.
Pecite dok rubovi ne potamne i na sredini se digne karakteristična “grba”. Za svaki slučaj provjerite čačkalicom jesu li pečeni.




MADELEINE AL CIOCCOLATO E ARANCIA


Da quando ho letto il post di Lydia qualche mese fa, mi sono messa a cercare gli stampi per fare le madeleines. Ormai mi ero rassegnata, stavo per ordinarli on-line, quando improvvisamente sono apparsi all'Ipercoop, e in offerta (5,5 euro). Naturalmente, sono tornata a casa con due stampi in mano. E poi sono andata a studiare la ricetta che ha pubblicato Lydia.
Non avendo nessun tipo di miele particolare (Lydia aveva il miele alla salvia), ho deciso di provare la combinazione di cioccolato e arance.
Sono un po' delusa con il risultato. Sono sicura che con il miele il risultato sarebbe stato migliore. E poi, la gobba. Inizialmente era bellissima, stava crescendo proprio come desideravo... e poi l'eruzione, e sì, sembravano i piccoli vulcani. Ho cotto una parte a 210°C, e la seconda a 240°C. La seconda parte è venuta molto meglio.
Devo dire che mia figlia Francesca (è lei che mi ha fatto la domanda "Mamma, perché ti piace fare i dolci? proprio mentre preparavo questi dolci) e mia suocera erano più contente di me, e le madeleines sono sparite in poche ore.


  • 125 g burro
  • 3 uova
  • 125 g zucchero
  • 145 g farina
  • 2 cucchiaini di lievito
  • 40 ml yogurt
  • 1 arancia
  • 30 g cioccolato fondente
  • 30 g cioccolato bianco
Fatte fondere il burro e lasciatelo raffreddare.
Sbattete le uova con lo zucchero finché gonfie e chiare.
Unite lo yogurt, la scorza grattugiata di un'arancia intera, e il succo di una metà.
Incorporate delicatamente la farina setacciata con il lievito, e alla fine anche il burro, versandolo piano.
Dividete il composto in due parti uguali, aggiungete il cioccolato fondente grattugiato in una, e quello bianco nell'altra metà.
Coprite e lasciate in frigo per almeno qualche ora (anche tutta la notte).
Riscaldate il forno a 240°C. Quando il forno è quasi caldo, distribuite cucchiai di composto negli stampi per madeleine (imburrati e infarinati) e infornate. Sono pronte quando i bordi iniziano a diventare scuri, ma fatte comunque la prova con uno stuzzicadenti.

  5. Your daughter is so cute. I think if someone asked me why I like cooking so much I'd say, it's because it makes me happy, others enjoy it which I love and because it makes me feel connected to my roots.

  9. L'idea di girarle è geniale ed è carino da partetua fare vedere il rovescio della medaglia (ops delle maddalens). Certo mi piacerebbe provare sia la tua versione che quella di Lydia, ma prima dovrei trovare gli stampini anche io! Per quanto riguarda la risposta da dare a tua figlia, io dico sempre ai miei che cucino per loro e ogni cosa che faccio è per loro, ma in realtà cucino per il tuo stesso motivo: mi piace mangiare e sperimentare nuove ricette e nuovi gusti alla ricerca dell'equilibrio di sapori perfetto!

  12. Ciao! e grazie mille per le dritte sulla tylose. Io mi diverto a fare la pasta di zucchero con la ricetta di Coquinaria che è anche il sito di cucina che frequento da parecchi anni.
    Ho pubblicato tutto quello che mi hai scritto sulla tylose e altro. Potevo vero? perchè altrimenti vado a cancellare subito.

  19. Madlene su ti predivne, a i ova kombinacija je odlična.
    Ne znam zašto nikad nisam bila zadovoljna oprobanim receptima, gdje sam griješila, ali kad-tad morat ću ih napraviti da izgledaju ovako dobro (inače su moje bile ukusne, ali se nisu podigle u sredini već su svaki put ostale u istoj ravni kako sam ih stavila u kalupe).

  20. Koliko sam ja skužila, Selma, da bi se stvorila "grba" potreban je kontrast jako vruća pećnica, jako hladno tijesto. Netko čak preporuča da se tijesto stavi nakratko u zamrzivač prije pečenja. Meni su se čak i previše digle, odnosno eruptirale su kao vulkani.
    Spremam se iskušat još nekoliko recepata.
