Chocolate Meringue Cake

Just one chocolate cake and the weekend can begin!
If you are thinking about something really good to prepare this weekend for your family, friends, a dinner party or just something to treat yourself, if you are one of those people with chocolate soul... than don't think twice, make it! This cake will not disappoint you, promise. I've made it so many times already, and noone's ever said it's just ok, or didn't like it. Only mmmmmmmmmmm, Oh, my God! and similar exclamations.
In fact, I don't know why I've waited so long to share the recipe and my thoughts on it.
It's Donna Hay's recipe. The cake you see in the pictures is the one made following the quanities written in her recipe. But after that first time I've always reduced chocolate and butter (find the indications bellow, in the recipe) and I was much more satisfied with the result. You are not going to loose any of the chocolate flavour, don't worry. It's just that I find there are borderlines when something  gets overloaded or too heavy, and I prefer looking for a new balance between ingredients. Leaving, however the choice to you.
Not a meringue kind of person? Stop it there! The meringue on top of this cake is not that dry, crumbly, overly sweet, melt in your mouth cookie. This meringue will get rather soft. The bottom part, touching the cake, starts melting slightly creating sort of soft, creamy layer between the cake and the meringue part. When you cut a slice, people are convinced you put a layer of jam or some kind of chocolate cream in there. I swear, I love that meringue part best of all and I'm not even meringue fan at all.
I bet you are already running the list of ingredients you need to buy so you can make it, am I right? And I'm pretty sure you already have them all in your pantry. It's simple. It doesn't really require great skills. And if your put in some love, especially chocolate covered love, it will turn out great.

Chocolate Meringue Cake
(recipe by Donna Hay)

* 240 g dark chocolate (I used 60% cocoa chocolate) - 180 g*
* 180 g butter - 150 g *
* 2 whole eggs
* 4 egg yolks
* 90 g brown sugar
* 1 teaspoon pure vanilla extract
* 50 g flour
* 40 g almond meal (finely ground almonds)
* 1/2 teaspoon baking powder

Chocolate meringue:
* 4 egg whites
* 200 g fine caster sugar
* 1 teaspoon white vinegar
* 3 teaspoon corn starch
* 25 g unsweetened cocoa

* reducing the quantity of chocolate and butter I got a lighter, softer, spongier cake, that resembles more brownies. With the original quantites I found the cake to taste a bit too heavy, dense, for my taste, especially after resting in the fridge.

Preheat the oven to 160°C.
Slightly grease a 24 cm spring cake pan and line the bottom with baking paper.
Finely chop the chocolate and melt it together with the butter (microwave or in a saucepan over low heat). Set aside to cool down.
Put the whole eggs, the egg yolks, the vanilla extract and the sugar into a mixing bowl and beat until thick and pale, 3-4 minutes.
Add the chocolate and butter mixture, the almond meal and the flour sifted together with the baking powder.
Pour the batter into the prepared cake pan and bake the cake for 35-40 minutes.
Remove the cake from the oven and increase the temperature to 180°C.
Whisk the egg whites with an electric mixer until soft peaks form. Start adding the caster sugar gradually, and continue whisking unitil the sugar's dissolved.
Add the vinegar and continue whisking for 2-3 minutes, until the meringue is firm and shiny.
Using a hand whisk, stir in the corn starch and the cocoa, previously mixed and sifted together, with slow and gentle moves, scraping the bottom and folding the meringue in order not to deflate it.
Pour the meringue over the cake. Level with a spoon or spatula and bake for 20-25 minutes.
Remove the cake from the oven. Let it sit in the pan for 15-20 minutes. Then gently run a small knife around the edge and remove the ring.
Let the cake cool down at room temperature, then put it in the fridge for 2 hours.
Remove the cake from the fridge 1/2 hour before serving it.
Dust the cake with a little cocoa before serving it.

Torta al cioccolato e meringa al cacao
(ricetta di Donna Hay)

* 240 g di cioccolato fondente (ho usato il cioccolato con 60% di cacao) - 180 g*
* 180 g di burro - 150 g*
* 2 uova intere
* 4 žumanjka
* 90 g di zucchero di canna
* 1 cucchiaino di estratto puro di vaniglia
* 50 g di farina
* 40 g di farina di mandorle (mandorle tritate finemente)
* 1/2 cucchiaino di lievito per dolci

Meringa al cacao
* 4 albumi
* 200 g di zucchero semolato 
* 1 cucchiaino di aceto bianco
* 3 cucchiaini di amido di mais (maizena)
* 25 g di cacao amaro

*Diminuendo la quantità di cioccolato e burro si ottiene una torta più morbida e leggera, che si avvicina molto ai brownies. Con le quantità originali ho ottenuta una torta per i miei gusti troppo pesante, densa, che in frigo poi diventa anche abbastanza dura, creando un contrasto troppo forte con la meringa che invece si ammorbidisce. 

Scaldate il forno a 160°C.
Ungete leggermente uno stampo con la cerniera da 24 cm e rivestite il fondo con la carta da forno.
Tagliate il cioccolato a pezzettini, mettetelo in un pentolino insieme al burro e fatelo sciogliere sul fuoco basso (in alternativa, usate il forno a microonde). Lasciate raffreddare.
Montate le uova intere, i tuorli, la vaniglia e lo zucchero fino a far diventare la massa gonfia e densa.
Unite il cioccolato con il burro, ormai raffreddati ma ancora liquidi. Aggiungete la farina di mandorle, e la farina setacciata insieme al lievito.
Mescolate e versate il composto nello stampo preparato.
Cuocete la torta per circa 35-40 minuti.
Togliete la torta dal forno e alzate la temperatura a 180°C.
Montate gli albumi a neve morbida.
Aggiungete gradualmente lo zucchero semolato e poi l'aceto. Continuate a montare la meringa per 2-3 minuti, finché diventi soda e lucida.
Setacciate e aggiungete l'amido di mais con il cacao nella meringa mescolando con una frusta a mano, con i movimenti lenti, su e giù, per non smontarla.
Versate la meringa sopra la torta e distribuitela uniformemente con il dorso di un cucchiaio o una spatola.
Mettete di nuovo la torta nel forno e lasciatela cuocere per circa 20-25 minuti.
Sfornate e lasciatela raffreddare nello stampo per 15-20 minuti. Passate poi un coltellino tra la torta e lo stampo, rimuovete l'anello e lasciate raffreddare la torta completamente a temperatura ambiente.
E normale che in questa fase la meringa crolli o si spacca un po'.
Passate poi la torta nel frigo per un paio d'ore.
Lasciatela a temperatura ambiente per 1/2 ora prima di servirla, spolverandola con il cacao amaro.

Umutite bjeljanjke u mekani snijeg.
I dalje muteći mikserom, dodajite postepeno šećer.
Dodajte ocat i mutite još 2-3 minute dok snijeg nije čvrst i sjajan.
Ručnom pjenjačom umiješajte škrobno brašno i kakao koje ste prethodno pomiješali i prosijali.
Istresite gotovu meringu preko torte, poravnajte i stavite ponovno peći oko 20-25 minuta.
Izvadite tortu iz pećnice, nakon 15-20 minuta prođite nožićem između torte i stranica kalupa pa skinite obruč.
Ostavite tortu da se ohladi na sobnoj temperaturi, a zatim je stavite 2 sata u hladnjak. Izvadite je iz hladnjaka barem 1/2 sata prije posluživanja.
Prije posluživanja pospite tortu kakaom.

Čokoladna torta s meringom

* 240 g tamne čokolade (koristila sam čokoladu sa 60% kakaa) - 180 g*
* 180 g maslaca - 150 g*
* 2 cijela jajeta
* 4 žumanjka
* 90 g smeđeg šećera
* 1 žličica ekstrakta vanilije
* 50 g brašna
* 40 g sitno mljevenih badema
* 1/2 žličice praška za pecivo

Meringa
* 4 bjeljanjka
* 200 g sitnog kristal šećera
* 1 žličica octa
* 3 žličice škrobnog brašna (gustina)
* 25 g gorkog kakaa

*Smanjivši količinu čokolade i maslaca u tijestu, dobila sam mekšu i po meni lakšu i ukusniju tortu, koja me podsjeća na brownies. Kad sam tortu pravila prvi put, s količinama navedenim u originalnom receptu torta je bila dosta teška, zbijena i u hladnjaku bi čak dosta očvrsnula. 

Zagrijte pećnicu na 160°C.
Malo namastite okrugli kalup promjera 24 cm i obložite dno papirom za pečenje.
Usitnite čokoladu i otopite je zajedno s maslacem. Ostavite smjesu da se malo prohladi.
Umutite pjenasto cijela jaja, žumanjke, ekstrakt vanilije i šećer.
Dodajte prohlađenu čokoladu s maslacem, mljevene bademe i brašno prosijano zajedno s praškom za pecivo.
Istresite smjesu u pripremljeni kalup i pecite oko 35-40 minuta.
Izvadite kolač iz pećnice i povećajte temperaturu na 180°C
Umutite bjeljanjke u mekani snijeg.

* moj je kalup bio manji, zato je torta ispala višlja nego treba i imala sam viška smjese za meringu koju sam oblikovala u puslice i sušila 1,5 sat na 120°C, a zatim ostavila da se ohlade u iskljčenoj pećnicu. Razgrabljene u par sekundi.

    1. Kako sam napisala, meni je bolja u "olakšanoj" varijanti, što ne znači da se nekom drugom ne sviđa baš onako kako je u originalnom receptu.

  2. Mamma mia Dajana, questa è lussuria allo stato puro. Mi hai assolutamente convinta che è da fare senza alcun dubbio. Che diametro aveva la taglia che hai usato tu? immagino che debba essere con l'anello sganciabile, altrimenti mi sa che si rompe tutta a sformarla

    1. sì, assolutamente, uno stampo con l'anello (a cerniera) di 24 cm di diametro. Anche se in alcune occasioni (per un numero più grande di persone) l'ho fatta in uno stampo rettangolare, viene un po più sottile, sopratutto la meringa, e poi tagliata a quadretti, tipo i brownies

  4. Definitely pinning this item for future reference. I can't say I've ever seen a meringue cake before. I'm not a huge meringue fan, but this has me really curious, and who doesn't love chocolate?!? ;)
