Vanilla Extract


Good things never last too long. At least that's what I can say about my vacation in Sardinia. I really loved it there, excellent food, wonderful people and, needless to say, amazingly beautiful sea.
And I could say it about my homemade vanilla extract, too.

I love flavours in cooking and baking. Lemon and orange zests are my favourite, closely followed by vanilla. Vanilla, however, must be real - I don't like those artificial flavourings, or vanilla sugars. Vanilla beans are absolutely necessary in some preparations, but they are not cheap, and wherever I can, I use vanilla extract.
Food stores in Italy carry only an artificial vanilla flavoring, and that's just not the same thing.
Therefore I started preparing my own vanilla extract, more than a year ago, and I can say that not only I've been enjoying this wonderful flavour, it's also worth it moneywise. It may seem expensive to prepare at first thought, but if you are carefull and "feed" it regularly it will last forever. I've discovered that my local health food store (NaturaSì) has the cheapest and at the same time best vanilla beans (organic, too), so I didn't bother ordering them online, for the modest quantity of extract I've made so far.
However, when I made the extract for the first time, I didn't know that you could continue adding liquor and beans and in this way make it last much, much longer, and just went on and on using it in cookies, ice cream, cakes, etc. The result is that I have only a couple tablespoons left, and had to run and prepare some more. After all, the baking season will certainly start soon, as soon as this African heat wave's gone.

Homemade Vanilla Extract


* 250 ml vodka or rum
* 3 vanilla beans

Wash carefully and sterilize a glass jar or a bottle.
Cut the vanilla beans in half lenghtwise and place them inside the container you chose.
Pour in the liquor, close well and shake.
Let it rest for 8 weeks in a dark place (e.g. a cupboard), shaking it well at least once or twice a week.
You can start using the extract by the end of the 8th week.
When you have used up about 20% of your extract, add more liquor (preferably the same kind you used at the beginning) and shake well.
If you have any empty vanilla beans left over from other preparations, you can add them to the bottle/jar.
Feeding the extract in this way it will never finish, it will last forever. From time to time you may remove some of the older beans if the bottle gets too crowded.
Store it in a dark place, no need to refrigirate.

Estratto di vaniglia fatto in casa


* 250 ml di alcol (vodka, rum) -  io: alcol puro per liquori 70%
* 3 bacche di vaniglia

Lavate bene e possibilmente sterilizzate un vasetto di vetro o una bottiglia.
Tagliate le bacche di vaniglia a meta in senso di lunghezza e infilatele nel vasetto o nella bottiglia.
Versateci l'alcol a scelta, chiudete bene e scuotetelo.
Lasciate riposare in un luogo buio per 8 settimane.
Durante questo periodo scuotete il contenitore almeno una o due volte alla settimana.
Il liquido diventerà sempre più scuro, giorno dopo giorno.
Passate le otto settimane, potete iniziare ad usarlo.

Alcune ricette dicono di filtrarlo a questo punto e di togliere le bacche, ma io non lo faccio per due motivi.
Primo, mi piacciono i semini che rimangono dentro, e ogni volta prima di usare l'estratto scuoto bene la bottiglia.
Secondo, lasciando le bacche dentro, potete "nutrire" il vostro estratto aggiungendo altro alcol al posto del liquido consumato, oppure aggiungere altre bacche avvanzatevi (che avete già svuotato) da altre preparazioni. In questo modo il vostro estratto durerà moooooooolto a lungo, anzi, non finirà mai.
Conservatelo in un luogo buio, nella credenza per esempio, non ha bisogno di frigorifero.
Usatelo per tutte le preparazioni, dal gelato, alle creme, biscotti, dolci, ecc. Di solito è sufficente aggiungere da 1/2 a 1 cucchiaino, o secondo la ricetta.

Domaći ekstrakt vanilije


* 250 ml alkohola (vodka, rum, lozovača)
* 3 mahune vanilije

Mahune prerežite na pola po dužini.
Stavite ih u čistu (po mogućnosti i steriliziranu) staklenu bocu ili teglicu.
Nalijte alkohol.
Čvrsto zatvorite poklopcem odnosno čepom, protresite i stavite na tamno mjesto.
Često protresite (barem 1 ili 2 put tjedno). Svakim danom će tekućina postajati sve tamnija.
Na kraju 8 tjedna ekstrakt je spreman za upotrebu.

U nekim receptima piše da se ekstrakt nakon što je odstajao 8 tjedana procijedi. Ja nisam tako radila, jer volim sjemenke i ne smetaju mi, a osim toga ako ga ne procijedite, tj. ostavite mahune da stoje u boci i nakon što je prošlo razdoblje od 8 tjedana, možete ekstrakt i "nadohranjivati", što ja nažalost prvi put nisam radila, pa sam ga potrošila do kraja.

Kad potrošite otprilike 20%, možete nadopuniti istom vrstom alkohola koji ste koristili na početku.
Ako vam preostanu prazne mahune vanilije od drugih priprema, možete ih dodavati u bocu s ekstraktom.
Ako ekstrakt "nadohranjujete" na ovaj način, trajat će vam u nedogled. S vremena na vrijeme možete izvaditi starije mahune ako je gužva u boci.

Ekstrakt čuvajte na tamnom mjesto. Nije potrebno stavljati ga u hladnjak jer mu je osnovica alkohol i neće se pokvariti.

Mjere u receptu su samo omjer sastojaka, naravno možete povećati količinu alkohola i srazmjerno tome broj mahuna vanilije.

  1. I can only but agree with everything you wrote! I also make my own vanilla extract, but with vodka not rum and it's by far tastier than those liquids we are sold in the supermarket here in Spain too.

  2. Quant’è vero che le cose belle...e buone...durano poco! Quest’estratto è favoloso, il mio ormai è al arrivato al fondo e rimanda che ti rimanda non l’ho mai fotografato e postato. Neanch’io l’ho filtrato, mi piacciono i semini. Ho solo recuperato le bacche per profumare un po’ lo zucchero e poi le ho tritate la macina caffè. Certo profumano poco ma danno cmq il loro contributo. Un bacione, bentornata ^__^

  7. I keep meaning to try this. I hate the fake stuff also. Vanilla extract is so expensive and I use so much I really should give this a try.
