Coconut Vanilla Muffins

I so love when the kids insist they don't like something and then change their mind.
That was exactly the case with these muffins. No, no, no, we don't like coconut!!! But once they tried a little piece, the rest of the muffins was destined to disappear in a matter of seconds... with my generous help, of course.
That's because you can't really feel the coconut, my daughter said.
And she was right... in part. The coconut flavour is not so strong, but you can tell it's there. The muffin itself is so soft and delicate you can't stop eating it, feeling the vanilla and coconut gently tickling your taste buds, and that feeling you must take another bite to see whether the next one tastes the same :)))

The recipe comes from a lovely on-line food magazine Threef, and I really suggest you give it a glimpse even if you don't understand Italian, you'll certainly enjoy amazing photography accompanied by some great looking food.


Coconut Vanilla Muffins

Coconut Vanilla Muffins

for 8 muffins:
* 1 egg
* 130 g sugar
* 120 ml coconut milk
* 90 ml vegetable oil
* 150 g flour
* 1 teaspoon baking powder
* 1 teaspoon pure vanilla extract
* a pinch of salt
* 50 g shredded coconut

Whisk the egg and the sugar together. Add the coconut milk, the oil and the vanilla extract.
In another bowl mix and sift together the flour, the salt and the baking powder.
Mix the wet ingredients into dry ones and stir well.
Mix in the shredded coconut.
Line a muffin pan with paper liners and fill them up to 2/3 with the batter.
Bake the muffins in an oven preheated to 170°C for 20-25 minutes or until a toothpick inserted in the middle comes out dry.
Let them cool on a cooling rack and dust with some powdered sugar before serving.

Muffin al cocco e vaniglia

per 8 muffin:
* 1 uovo
* 130 g di zucchero
* 120 ml di latte di cocco
* 90 ml di olio
* 150 g farina "00"
* 1 cucchiaino di lievito per dolci
* 1 cucchiaino di estratto puro di vaniglia
* un pizzico di sale
* 50 g di farina di cocco essiccato

Mescolate l'uovo e lo zucchero con una frusta a mano.
Aggiungete il latte di cocco, l'olio e l'estratto di vaniglia.
In un'altra ciotola mescolate la farina setacciata con il lievito e il sale. Mescolate gli ingredienti secchi con quelli umidi. 
Unite anche la farina di cocco.
Distribuite l'impasto nei pirottini per i muffin riempendoli fino a 2/3.
Infornate i muffin a 170°C per 20-25 minuti.
Lasciateli raffreddare e prima di servirli cospargeteli con un po' di zucchero a velo.


Coconut Vanilla Muffins


Jako su mi se svidjeli ovi muffini, jako mekani s blagom aromom kokosa. Djeca su u prvi tren zavikala "ne volimo kokos", ali kad su ih probale bile su oduševljene i muffini su nestali u trenu.

Muffini s kokosom i vanilijom
(iz on-line časopisa Threef) za 8 muffina:
* 1 jaje
* 130 g šećera
* 120 ml kokosovog mlijeka
* 90 ml ulja
* 150 g brašna
* 1 žličica praška za pecivo
* 1 žličica ekstrakta vanilije
* prstohvat soli
* 50 g kokosovog brašna

Razmutite ručnom pjenjačom jaje sa šećerom.
Umiješajte ekstrakt vanilije, ulje i kokosovo mlijeko.
Posebno pomiješajte i prosijte skupa brašno, prašak za pecivo i sol pa dodajte u smjesu od tekućih sastojaka.
Izmiješajte smjesu pjenjačom da se izjednači, a onda dodajte kokosovo brašno.
Napunite kalupe za muffine do 2/3 i stavite ih peći u pećnicu zagrijanu na 170°C, 20-25 minuta (provjeravajte čačkalicom ubodenom u sredinu muffina, kad izađe suha, gotovi su).
Izvadite ih iz kalupa i ostavite da se ohlade.
Prije posluživanja, po želji ih pospite šećerom u prahu ili kokosovim brašnom.
*bilješka:
Mislim da bi ovi muffini bili odlični i s dodatkom nekog voća - npr. komadića breskve, ananasa i sl., ili s dodatkom malo soka i korice limete.

  2. E ja sam baš suprotna - obožavam kokos! Zato me i privukao recept. Jako lijepo, ne moram ni reći da izgledaju savršeno meko i pahuljasto :)
