As I've wri...I'm really sorry to hear that. As I've written in the recipe, I've always added some yeast or sourdough starter. The original recipe, however, said the bread would rise perfectly (and so did the pictures show) without any addition using only homemede kefir. I have no experience with homemade kefir, but the first signs of fermentation should have been visible during the initial phase. When I mixed the kefir starter with the rest of the flour the dough hasn't risen and remained flat. I really have no idea what I did wrong - I followed the recipe precisely and the images are great as well. I baked the bread, hoping some miracle would happen in the oven but it came out flat and hard as a stone. Any ideas what went wrong? It only contains freshly ground whole wheat flour, salt and kefir. It takes 24 hours (so we do it every other day) and makes two loaves. I use strong white at first to get it going, then after an overnight rise , knock it back with brown flour, then another rise, then in the oven next morning; rises in a small bread tin, easiest bread I've made!
