Taralli



Taralli are Italian snack food. They are a crunchy, and similar in texture to breadsticks and pretzels. Addictive, really.
Basic ingredients are flour, wine or water, extra virgin olive oil, yeast (often made without any leavening agent). Different flavourings may be added to the dough, most traditional one are fennel seeds, but also pepper, anice seeds, chilly pepper flakes, or simply salt for plain flavour.
There's also a sweet version of taralli, often glazed with sugar glaze.
Similar to a bagel preparation, the dough once it's shaped (rings or ovals) is boiled shortly and then baked in the oven, which gives them interesting texture and they are glossy as if glazed.
They keep very well for months if kept in an airtight container.
Use them simply as a snack between meals (make sure you don't exaggerate, they're addictive), or serve them as an aperitif with wine or beer at dinner parties.
They may seem complicated to prepare but they really aren't, and once you try making them you'll be making them over and over again.
In my case, I used some sourdough starter to make these. It doesn't matter if it's not active/refreshed, if you have some extra sourdough starter, this is a perfect way to use it. If you don't have any sourdough starter, omit it (it may be necessary to adjust the flour quantity in the recipe) or substitute with a small quantity of fresh or dried yeast.

* 100 g water
* 100 g sourdough starter
* 50 g extra virgin olive oil
* 4 g salt
* 250 g AP flour
* (optional) seasoning to your taste: fennel seeds, chilly flakes, black pepper, sesame seeds, poppy seeds

Put the water into a mixing bowl. Add the sourdough starter cut or torn into small pieces. Whisk or mix with your hand until the sourdough starter is dissolved.
Stir in a few tablespoons of flour, followed by olive oil, and in the end the remaining flour and salt (plus seasoning if adding any). Bring everything together and knead until you get smooth, firm dough.
Place the dough into a clean bowl and cover/seal (with a plastic wrap). Let the dough rest for 1 hour at room temperature.
Transfer the dough on a kneading board (no need to flour it). Flatten it slightly with your hands, then fold the upper third toward the middle, and the lower one over it. Roll the dough a bit with both your hands to get a thick "sausage". Using a pastry cutter, cut the "sausage into small pieces.
Roll the small pieces of the dough into thin ropes (thick as a pencil) and cut them into 10-12 cm pieces (4-5 inches). Join the ends slightly ovelapping them. As you proceed forming the taralli, place them on the board.
Bring to a boil a saucepan of water (not necessarily a big one). When you finish shaping all the taralli, drop them shortly into boiling water - a few (max. 4-5 pieces) at a time - once they float to surface (like potato gnocchi) remove them with a slotted spoon (they may stick to the bottom, so make sure you move them a bit). Remove them from water and place shortly on a cotton cloth or kitchen towel - a few seconds, to dry any excess water, but move them to a baking sheet lined with baking paper almost immediately, otherwise they will stick to the paper/cloth.
Once they have all been boiled and lined on baking sheets (you'll need two big ones), turn the oven on to 200°C (390F).
While the oven is being heated the taralli will slightly dry in surface.
Once the oven is hot, place the sheets in, and bake the taralli for 15 minutes, lower the heat to 180°C (350F) and bake them for further 5-7 minutes (maybe a few minutes longer), until they result golden brown and crisp/dry inside.
Remove them from the oven and let them cool down on the baking sheets.
Once they are cold, store them in an airtight container or well sealed, zip lock plastic bag.

(per circa 60 pezzi)
* 100 g di acqua (o vino)
* 100 g di pasta madre solida (rinfrescata o esubero)
* 50 g olio extravergine d'oliva
* 4 g di sale
* 250 g di farina "0" 
* (optional) semi di finocchio, pepe nero, peperoncino, semi di sesamo ecc. per insaporire

Mettete l'acqua in una ciotola. Aggiungete la pasta madre spezzettata e fatela sciogliere mescolando con una frusta a mano o semplicemente schiacciandola con la mano.
Aggiungete qualche cucchiaio di farina, poi l'olio, la restante farina, sale, e se desiderate semi, pepe o peperoncino (altrimenti lasciateli semplici).
Mescolate e poi impastate il tutto finché risulti liscio e sodo. Mettete l'impasto a riposare in una ciotola coperta, per 1 ora, a temperatura ambiente.
Trasferite l'impasto sulla spianatoia (non è necessario infarinarla). Appiattitelo leggermente con le mani formando un rettangolo. Piegate la parte superiore verso il centro, e poi anche quella inferiore. Rotolate l'impasto con tutte e due le mani formando un salsicciotto. Tagliate l'impasto a pezzettini.
Rotolate ogni pezzettino di impasto con le mani formando dei rotolini di spessore di una matita e tagliateli a pezzi lunghi 10-12 cm.
Unite i due lati formando delle ciambelline. Man mano che li preparate, sistemateli sulla spianatoia.
Quando sono tutti formati, portate a ebollizione un pentolino con l'acqua.
Mettete pochi taralli alla volta nell'acqua bollente (non più di 4-5) e non appena l'acqua riprende a bollire e i taralli vengono a galla (attenzione che potrebbero attaccarsi sul fondo del pentolino, quindi smuoveteli un po'), toglieteli con un mestolo forato. Metteteli per qualche istante su un canovaccio pulito o la carta assorbente, per asciugare l'acqua, e poi sistemateli sulle placche da forno rivestite con la carta forno (vi serviranno due placche grandi).
Quando avete finito di sbollentare tutti i taralli, accendete il forno a 200°C lasciando asciugare i taralli all'aria mentre il forno si riscaldi.
Infornate i taralli per 15 minuti, poi abbassate la temperatura a 180°C e lasciateli cuocere per altri 5-7 minuti (o poco più) o finché sono belli dorati e secchi e friabili all'interno.
Lasciateli raffreddare e poi conservateli in un contenitore ermetico o buste di plastica ben sigillate.



Taralli


Ove zarazne talijanske grickalice, karakteristične za skoro sve južne talijanske pokrajine, možemo smjestiti u istu kategoriju s grisinima ili perecima, štapićima. Tijesto je jako jednostavno, brašno, voda ili vino, malo kvasca (u mojem slučaju prirodni kvas), dobro maslinovo ulje i po želji razni dodaci, od kojih najčešće sjemenke koromača i peperoncino. Mi ih najviše volimo jednostavne, samo s malo soli.
Postupak pripreme je pomalo sličan pripremi bagela, tj. oformljeno tijesto se prvo kratko prokuha, a zatim se peče u pećnici.
Rezultat je tijesto posebne, prhke teksture, dok su izvana sjajni kao da su premazani glazurom.
U Italiji postoje i slatke varijante taralla, koji se u tom slučaju premazuju bijelom ,šećernom glazurom.

* 100 g vode (ili bijelog vina)
* 100 g prirodnog kvasa (može biti osvježen ili neosvježen)
* 50 g extra djevičanskog maslinovog ulja
* 4 g soli
* 250 g mekog brašna
* (po želji, možete i izostaviti) dodaci: sjemenke koromača, pahuljice sušenog peperoncina, mljeveni crni papar, sezam, mak itd.

Stavite vodu u zdjelu i dodajte nakidan kvas. Miješajte ručnom pjenjačom ili rukom dok se kvas ne otopi.
Umiješajte par žlica brašna, zatim ulje, i na kraju preostalo brašno, sol i ako želite dodatke (navedene u sastojcima, odaberite jedan od predloženih, ili ostavite tijesto jednostavno ako ne želite ništa). Izmiješajte sve i zamijesite tijesto. Mijesite tijesto na dasci dok ne postane glatko.
Smjestite tijesto u čistu zdjelu, pokrijte i ostavite da odmara 1 sat.
Premjestite ponovno tijesto na radnu površinu. Lagano ga rastanjite rukama na pravokutnik pa preklopite prvo gornju, a zatim i donju trećinu prema sredini. Zarolajte tijesto rukama da dobijete deblju "kobasicu".
Izrežite je zatim na komadiće. Zarolajte svaki komadić dlanovima dok ne dobijete ujednačene prutiće debljine olovke i izrežite ih na komade duge 10-12 cm.
Spojite krajeve tako da se malo preklapaju.
Kako oblikujete taralle, tako ih slažite jedan do drugog na radnu dasku/površinu.
Kad ste završili s oblikovanjem, stavite manju šerpicu/lončić s vodom da zavrije. Kad voda proključa spuštajte po nekoliko komada (ne više od 4-5) u ključalu vodu. Čim voda ponovno provrije i taralli isplivaju na površinu izvadite ih šupljikavom žlicom (pazite jer se mnogi zalijepe za dno pa ih malo pomjerajte nakon što ih ubacite u vodu). Vadite ih na čistu kuhinjsku krpu ili nekoliko slojeva kuhinjskog papira da se ocijedi višak vode, ali samo na kratko jer će se zalijepiti (posebice za papir). Premjestite ih zatim na pleh obložen papirom za pečenje (bit će vam potrebna dva pleha).
Kad ste prokuhali sve taralle, uključite pećnicu na 200°C i ostavite taralle da se malo prosuše na zraku dok se pećnica zagrijava.
Pecite ih u vrućoj pećnici 15 minuta, zatim smanjite na 180°C i pecite još 5-7 mintua, možda minutu dvije duže - dok nisu zlatno smeđi izvana, a prhki i suhi iznutra.
Izvadite ih iz pećnice i ostavite da se potpuno ohlade.
Spremite ih hermetički zatvorenu posudu ili dobro zatvorene plastične vrećice.
