Cotton Soft Japanese Cheesecake




It's time to say Goodbye to 2014, whether it was good or bad, happy or sad, it's come to an end.
Thank you for being here with me often or only sometimes. Thank you for coming back. Thank you for reading. And thank you for trying out the recipes I shared with you. Yes, I'd like to say 'thank you' to each and every one of my readers. Wish we could have a party together. 
But since that is impossible, I'm going to thank you once more and say goodbye until 2015 in the spirit of this blog,  with this beautiful cheesecake. 


Japanese Cotton Soft Cheesecake

There's probably few, if any, people who never heard of this cake. I usually don't fall for cheesecakes. I soon imagine something heavy and overly sweet. But curiosity, as often happens with me, was stronger. I had to try it. Food bloggers will certainly remember it being highly popular a few years ago. I don't usually follow the fashion in any field, and food is not an exception. But after some time, I just had to make it and see what was all the fuss about.
I cannot describe my surprise. It don't even remember what I expected it to taste like. All I know is that I felt like a child with a new toy in it's hands. And I didn't want to share that new toy with anyone else.
This cheesecake has a unique texture. Soft and incredibly moist. Light and fluffy as a piece of cotton.
It's difficult not to fall in love with it.
If you're still looking for a recipe for tomorrow evening, I feel obliged to recommend you make this.
You can enrich it and serve with some red berries or other fruit that is believed to bring good luck and is always eaten on New Year's Eve in your country.



Japanese Cotton Soft Cheesecake


Cotton Soft Japanese Cheesecake

Ingredients:
* 250 g cream cheese (at room temperature)
* 60 g butter, softened 
* freshly squeezed juice of 1/2 lemon
* 60 g all purpose flour
* 20 g corn or potato starch
* 100 ml milk
* 6 eggs, at room temperature
* 150 g fine caster sugar
* 1 teaspoon vanilla extract




Preheat the oven to 150°C.
Line a round,  20 cm spring form with baking paper. This cake is baked in water bath, so place the spring form in an aluminium (disposable) pan, same size as your cake pan,  to prevent the water from entering inside the cake pan. If you don't have a disposable aluminium pan, protect the cake pan with aluminium foil from the outside.  Place thus prepared cake pan into a larger, deep pan that will contain the water for water bath.

Beat the softened butter with the cream cheese until fluffy. Add the lemon juice and continue beating with an electric mixer.
Add the egg yolks, one at a time, beating shortly after each addition.
Mix and sift three times the flour and the starch, and then add to the batter.
Add the milk and mix well again.
In a separate bowl whip the egg whites with the sugar and the vanilla extracts until stiff peaks form.
Fold the egg whites into the batter using a whisk, carefully and slowly in order not to loose the air.
Pour the batter into previously prepared cake pan. Pour about 2 cm hot water into the larger pan containing the cake pan.
Bake the cake for 1 hour - do not open the oven during this time.
Turn the oven off and leave the cake inside for 45 minutes, with the oven door slightly ajar.
Remove the cake from the oven and let it cool down completely in the pan.
Remove the cake from the pan, dust it with powdered sugar and serve with fresh fruit or fruit compote. I particularly liked it served with filleted orange and chocolate sauce.










Torta Giapponese al formaggio

Ingredienti:
* 250 g di formaggio tipo Philadelphia classico, a temperatura ambiente
* 60 g di burro, ammorbidito
* succo di 1/2 limone
* 60 g di farina 00
* 20 g di amido di mais (o fecola di patate)
* 100 ml di latte 
* 6 uova, a temperatura ambiente
* 150 g di zucchero semolato
* 1 cucchiaino di estratto puro di vaniglia

Scaldate il forno a 150°C.
Rivestite una tortiera a cerniera, di 20 cm di diametro, con la carta da forno. Sistemate la tortiera in uno stampo di alluminio (usa e getta)  oppure rivestitela accuratamente con la carta argentata al esterno per prevenire che durante la cottura a bagno maria l'acqua penetri nello stampo con la torta.

Lavorate il burro con il formaggio usando uno sbattitore elettrico fino a rendere la massa spumosa.
Aggiungete prima il succo di limone e poi, in seguito, i tuorli d'uovo, uno alla volta, sbattendo per qualche secondo tra uno e l'altro.
Unite la farina setacciata per tre volte insieme al amido di mais (o fecola).
Aggiungete il latte e sbattete ancora per incorporarlo.
A parte montate gli albumi a neve ferma, con lo zucchero e l'estratto di vaniglia.
Mescolate gli albumi con il primo impasto usando una frusta a mano, con i movimenti lenti dal basso verso l'alto per non smontare il composto.
Versate il composto nella tortiera che avete sistemato in una teglia più grande e con i bordi alti, e nella quale versate circa 2 cm di acqua calda.
Infornate la torta e cuocetela per 1 ora (senza mai aprire il forno).
Spegnete il forno ma lasciate la torta dentro per altri 45 minuti, con la porta del forno leggermente aperta.
Infine, togliete la torta dal forno e lasciatela raffreddare completamente nello stampo.
Trasferitela poi su un piatto da portata (attenzione perché è molto delicata).
Cospargete la torta con lo zucchero a velo e servitela accompagnandola con la frutta fresca o composta di frutta. A me è piaciuta particolarmente con i filetti di arancia e salsa al cioccolato fondente.

Japanska torta od sira

Sastojci:
* 250 g punomasnog krem sira (sobne temperature),
* 60 g maslaca,
* sok 1/2 limuna,
* 60 g brašna,
* 20 g škrobnog brašna,
* 100 ml mlijeka,
* 6 jaja (sobne temperature)
* 150 g sitnog kristal šećera
* 1 žličica ekstrakta vanilije

Zagrijati pećnicu na 150°C.
Kalup za tortu promjera 20 cm obložiti iznutra papirom za pečenje. Izvana ga obložiti aluminijskom folijom tako da dopire do ruba kalupa jer će se kolač peći u vodenoj kupelji, pa da voda ne prodre u kalup. Smjestiti tako obložen kalup u dublji pleh. *Ja sam stavila kalup za tortu u okrugli aluminijski kalup za jednokratnu upotrebu, koji se lako prilagodi veličini kalupa i savršeno spriječava da voda prodre unutar kalupa za tortu.
Umutite pjenasto maslac s krem sirom. Dodajte sok limuna i nastavite tući mikserom.
Dodajte jedan po jedan žumanjak i nastavite tući nakon svakog dodavanja. Dodajte brašno i škrobno brašno koje ste prethodno pomiješali i prosijali tri puta. Dodajte mlijeko i opet izmiksajte.
Posebno umutite čvrst snijeg od bjeljanjaka sa šećerom i ekstraktom vanilije. Dodajte snijeg u prvu smjesu, miješajući pjenjačom, polako i pažljivo da smjesa ne splasne.
Istresite smjesu u pripremljeni kalup. U pleh u koji ste smjestili kalup s tortom ulijte oko 2 prsta vruće vode.
Stavite peći tortu u zagrijanu pećnicu 1 sat bez otvaranja pećnice.
Isključite pećnicu i ostavite kolač unutra još 45 minuta s odškrinutim vratima pećnice (možete staviti kuhaču u vrata da se ne zatvore.
Izvadite kolač iz pećnice i ostavite ga da se potpuno ohladi u kalupu, a onda ga izvadite iz kalupa i pospite šećerom u prahu.
Poslužite ga samog ili s bobičastim voćem. Meni se posebno svidjela u kombinaciji s filetima naranče i umakom od čokolade.
