Apple and Dulce de Leche Hand Pies

As if the passage from summer to fall wasn't stressful enough on its own.
All the things that start during this period kept piling on my shoulders leaving no space for slow and gradual adaptation. I got really overwhelmed with everything. And if I thought for a moment that my parents-in-law visiting would be helpful, I was wrong, of course. It only added more things to do to my already bursting schedual. So much that in ten days I hardly ever sat in front of my computer, and I abandoned my blog again.
And if you thought for a second, Hey, at least you made these to console yourself... No. I made these long time ago. But since my DSLR camera broke thanks to little monkey baby boy (Boy, he sure has enough energy to destroy four adults within an hour!), the only thing I can do is pull some old posts from the draft.
Hope you can enjoy them anyway. It's fall after all, and apples are just coming into season.
Wrap them in a crunchy little coats, and make them swim in a little caramel pond. They are so cute and handy even to take along wherever you go, for a quick snack and energy refill.

Apple and Dulce de Leche Hand Pies

Pie crust:
* 300 g flour
* a pinch of salt
* 40 g sugar
* 150 g cold butter
* 50 ml ice cold water
Filling:
* 2 apples (about 200 g when cleaned and chopped)
* 20 g butter
* 2 TBspoons brown sugar
* about 200 g dulce de leche

Put the flour into a mixing bowl. Add the salt, sugar and the cold butter, chopped.
Rub the butter into the flour to get coarse crumbs.
Adding cold water (very cold, better if from the fridge) and quickly bring everything together without kneading too much.
Wrap the dough into a piece of plastic wrap and chill in the fridge for at least 1 hour.
You may prepare the pie crust in the food processor as well, making sure you don't overmix and get the butter to start melting (better use pulsing function).
For the filling, prepare the dulce de leche in advance by cooking an unopened can of sweetened condensed milk for 3 hours completely immeresed in water. Once the can has cooled down completely, open it and transfer the dulce de leche into a glass jar and store in the fridge. Alternatively, use store bought Dulce de leche.
Peel the apples and cut them into small cubes.
Melt the butter in a skillet, add the apples and sugar. Cook on medium heat until the apples are soft and slightly caramelized.
Set them aside to cool.
Roll the dough out quite thin (2-3 mm) on a slightly floured surface.
Cut the dough into 8-10 cm large circles.
Put a little (approx 1 teaspoon) dulce de leche on half of the circles and top it with a teaspoon of apples.
Cover the filling with another circle and press the edges with a fork.
Cut a little cross vent on the upper part of the dough.
Place the little pies on a baking sheet, brush them with an egg wash (an egg sligly beaten with little milk), sprinkle with sugar and bake in an oven preheated to 180°C for about 20 minutes or until golden.

Mini pies con mele e dulce de leche

Impasto:
* 300 g farina "00"
* un pizzico di sale
* 40 g zucchero
* 150 g burro freddo
* 50 ml acqua fredda
Ripieno:
* 2 mele (circa 200 g di mele pulite)
* 20 g burro
* 2 cucchiai di zucchero di canna
* circa 200 g dulce de leche

Setacciate la farina in una ciotola.
Aggiungete il sale, lo zucchero e il burro freddo a tocchetti.  
Strofinando il burro e la farina con le dita formate delle briciole grossolane.
Aggiungendo l'acqua molto fredda impastate velocemente e formate una palla.
Avvolgetela nella pellicola trasparente e lasciate riposare in frigo per almeno 1 ora.
Per il ripieno, preparate il dulce de leche (con anticipo, il giorno prima) facendo bollire una lattina di latte condensato zuccherato in una pentola con l'acqua per 3 ore facendo l'attenzione che la latina fossi sempre completamente immersa. Lasciate poi raffreddare completamente la latina prima di aprirla e conservate il caramello (dulce de leche) così ottenuto in un baratolo di vetro nel frigo.
Sbucciate le mele e tagliatele a cubetti. Mettetele a cuocere in una padella insieme al burro e lo zucchero finché le mele risultino morbide e leggermente caramellate.
Lasciatele raffreddare.
Con un mattarello, stendete la pasta a uno spessore di 2-3 mm su una superficie leggermente infarinata.
Tagliate un numero pari di cerchi di 8-10 cm di diametro.
Mettete un cucchiaino colmo di dulce de leche su metà dei cerchi di pasta, e un cucchiaino di mele cotte.
Coprite il ripieno con un altro cerchio di pasta e premete i bordi con i rebbi di una forchetta.
Incidete una X sul cerchio superiore per permettere al vapore di fuoriuscire durante la cottura.
Spennellate le pies con un uovo sbattuto con un po' di latte e cospargetele con lo zucchero, poi infornatele a 180°C per circa 20 minuti.

Tijesto
* 300 g brašna
* malo soli
* 40 g šećera
* 150 g hladnog maslaca
* 50 ml hladne vode
Nadjev
* 2 jabuke (oko 200 g očišćenih jabuka)
* 20 g maslaca
* 2 žlice smeđeg šećera
* oko 200 g dulce de leche

Stavite brašno u zdjelu. Dodajte sol, šećer i hladan maslac nasjeckan na kockice.
Utrljajte prstima maslac u brašno da dobijete mrvice.
Ulijte vodu (neka bude jako hladna, iz hladnjaka) i brzo zamijesite tijesto, tek toliko da se sve poveže, ne mijesite previše.
Omotajte prozirnom folijom i stavite u hladnjak najmanje 1 sat.
Možete sve ovo napraviti i u multipraktiku - istim redoslijedom kao i ručno, samo ne miksajte previše da se maslac pregrije.
Za nadjev: dulce de leche ja pripremam od zaslađenog kondenziranog mlijeka - stavim kuhati limenku u loncu s vodom oko 3 sata (ne otvaram i ne bušim limenku). Ostavim da se potpuno ohladi, a onda otvorim i prebacim u staklenku, pa u hladnjak.
Jabuke ogulite i narežite na kockice.
Zagrijte u tavi maslac, dodajte jabuke i šećer. Miješajući pirjajte jabuke da malo odmeknu i karameliziraju se.
Ostavite ih da se ohlade.
Razvaljajte tanko tijesto (oko 2-3 mm) na vrlo malo pobrašnjenoj površini.
Izrežite okruglim kalupom promjera 8-10 cm paran broj krugova.
Na polovicu krugova stavite prvo otpriliku punu žličicu dulce de leche, a preko njega žličicu jabuka.
Poklopite drugim krugom tijesta i stisnite rubove, prvo prstima, a zatim vilicom.
Zarežite malo u križ gornje tijesto.
Stavite pripremljene pitice na pleh, premažite ih jajetom umućenim s malo mlijeka, pospite šećerom i stavite ih peći u pećnicu zagrijanu na 180°C oko 20 minuta odnosno dok lagano ne porumene.

  4. I parenti sono sempre impegnativi da gestire. Ma alla fine fa anche piacere vederti...non troppo, ogni tanto è sufficiente :-)
    Comunque questi dolcetti sono perfetti per questo periodo, devono essere deliziosamente golosi. E anche carinissimi da vedere
