Kefir Bread for World Bread Day 2010

This is my first time participating in the  World Bread Day event organized by Zorra.
Baking home made bread has become my regular activity at least twice a week. Although we don't eat huge quantities of bread (one loaf will last sometimes 3-4 days), we like the taste and smell that spreads around the kitchen every time I bake it. Also the feeling that I know what's in there, what flour and the lack of strange ingredients, makes me much happier.
This bread, The Kefir Bread, has been such a wonderful discovery. I've made it twice in a week, and trust me it stays gorgeosly fresh and tasty.
The original recipe, that I, by the way, changed quite adding more water and baking it as I usually do with the no knead bread, didn't have any additional leavening agents (like sourdough starter or yeast), but only kefir starter.
I didn't have the possibility to use the home made kefir, and my storebought kefir didn't ferment as expected. For this reason I decided to "help" the dough adding some dry kamut flour sourdough starter, using however only a bit more than a half quantity I'd normally add to this quantity fo flour. In any case, whether using only kefir starter or adding the sourdough starter, remember that both require longer rising time than normal dry or fresh yeast, but the taste is much better.
Although the kefir starter wasn't very active in the fermenting process, it still added gorgeous flavour to this bread.
The first time I made this bread I used 2 and 1/2 cups white flour + 1/2 cup whole wheat flour, the second time I used 2 cups white, 1/2 cup whole wheat and 1/2 cup rye flour. Next time I'm definitely increasing the quantity of whole wheat or rye flour.

Kefir bread

Bread with Kefir starter


(for one loaf):
150 ml kefir (preferably home made)
3 + 1/2 cups (450 + 50-75 g) strong bread flour (I use "0" type Italian flour)
10 g dry sourdough starter or adequate quantity of fresh sourdough starter or 3,5 g active dry yeast or 12.5 g fresh yeast (if using homemade kefir you will not need any of these)
about 200 ml lukewarm water
1 teaspoon salt

* Mix the kefir with 1/2 cup (75 g) flour in a glass bowl. Mix well with a fork until the flour's melted, cover with a piece of cling film and let rest/ferment at room temperature for 24 hours.
* If you're lucky and have some homemade kefir, you will not need any additional leavening agent (sourdough starter or yeast), but if like me you can't get any, help your dough adding just half of the necessary quantity of yeast for this quantity of flour.
* Put 2 and 1/2 cups (375 g) flour in a large mixing bowl (or the bowl of your stand mixer) and mix in the dry sourdough starter or dry active yeast (if using it). Add the kefir starter and start mixing everything with your hands/wooden spoon or with the mixer using a hook attachment, adding gradually the salt and the lukewarm water.

* When all the flour's been absorbed, you'll have a pretty wet and sticky dough. Add 1 TBspoon of flour at a time, mixing/stirring with a wooden spoon until the dough stops being sticky and a nice, smooth ball's formed.
Move the dough to a floured kneading board and continue kneading it for about five minutes adding little flour at a time, just as much is necessary for the dough not to stick to the surface.

* Get a piece of parchment paper and flour it well. Shape the dough into a loaf and place it on the prepared parchment paper. Move the dough with the paper into a loaf pan, cover with a clean cotton cloth and place into a cold, closed oven or microwave oven. Leave it there for 2 and 1/2 hours.

* When the dough has reached the rim of the loaf pan, take it out, lift it together with the paper and move to the kneading board again. Flaten the dough gently with your hands (do not press too much in order not to lose all the air). Then roll it up forming a loaf again.

* Flour the loaf well on bottom and top (I use semolina flour) and close the parchment paper loosely over the loaf. Cover with a cotton cloth and let rest again for 1/2 to 1 hour.
* In the meantime, put a cast iron pot (mine is oval) with a lid, or any other similar baking dish (pyrex, terracotta, metal) with a lid and without plastic parts, into the oven and turn it on to 250°C (480F).
When the oven and the baking dish are both hot, move the loaf into the dish (if it's been floured well, it will slide into the pot easily), make a few slashes with kitchen sheers, put the lid on and bake covered for about 15 minutes.

* Uncover and bake again for 15-20 minutes or until your bread is nice, caramel colour.
If you like the crust to stay crisp for longer time, after you've turned the oven off, leave the bread in placing it directly on the oven rack (without the pot) and leave it there for 15-20 minutes longer.
Let the bread cool before cutting it.

Kefir bread

Visto che ho un debole per il pane fatto in casa, non potevo che innamorarmi di Pane al kefir presentato qualche giorno fa da Terry.
Non avendo, però i granuli per fare il kefir in casa, come lei, mi sono affidata a quello comprato. Purtroppo, come sospettavo, comunque, il kefir che ho comprato è risultato poco attivo e quindi per non rischiare di ottenere una schiacciata invece del pane, ho aggiunto il lievito madre secco (fatto con la farina di kamut, comprato da NaturaSì insieme al kefir). Nonostante il mio lievitino di kefir non è stato molto "vivo", penso che abbia contribuito molto al sapore stupendo di questo pane, tanto da guadagnarsi il complimento "il pane perfetto" (grazie :)))
Se siete i possessori felici di kefir fatto in casa, il lievito madre o lievito di birra non saranno necessari per fare questo pane.
Ma se non è così, non rinunciate lo stesso, un piccolo aiutino sarà sufficiente per godere poi una fetta di pane stupenda.
Io ho cambiato alcune parti della ricetta che ha usato Terry, dalla quantità dell'acqua al modo di cottura.
La prima volta ho preparato questo pane con 2 tazze e mezzo di farina bianca + 1/2 tazza di farina integrale, la seconda volta invece, ho usato 2 tazze di farina bianca ("0") + 1/2 tazza di farina di grano integrale e 1/2 tazza di farina di segale integrale. Tenderò sicuramente ad aumentare la parte di farina integrale le prossime volte.


Pane al kefir


150 ml di kefir (preferibilmente fatto in casa)
3 + 1/2 tazza (450 + 50-75 g) di farina "0" o altri tipi
10 g di lievito madre secco (il mio era di kamut), o lievito madre fresco, (o se non avete nessuno dei due, lievito di birra secco (3,5 g) o fresco (12,5))
circa 200 ml di acqua tiepida
1 cucchiaino di sale


* Il giorno prima preparate il lievitino con il kefir e 75 g (1/2 tazza) di farina. Mescolate bene con una forchetta per non lasciare i grumi, coprite con la pellicola alimentare e lasciate fermentare per 24 ore. Se usate il kefir fatto in casa, noterete dei cambiamenti durante la fermentazione (che cmq. con il mio kefir comprato al super non è successo) e non avrete bisogno di aggiungere il lievito o lievito madre dopo, ma soltanto questo lievitino.
* Passato questo tempo, mettete 2 tazze e 1/2 (375 g) di farina in una ciotola grande (oppure nell’impastatrice se decidete di usarla), aggiungete il lievito madre (se serve come a me), il lievitino di kefir e cominciate a mescolare con le mani o con un cucchiaio di legno (o azionate l'impastatrice), aggiungendo gradualmente il sale e poi l'acqua. Quando avete incorporate tutta la farina e ottenuto un impasto abbastanza umido e appiccicoso, aggiungete un po' di farina alla volta (un cucchiaio circa) continuando a mescolare (o sbattere con il cucchiaio) fino a formare una palla di pasta che si separa dalle pareti della ciotola.
* Trasferite la pasta su una spianatoia infarinata, e impastate con le mani per 5 minuti circa aggiungendo la farina necessaria perché non si appiccichi alla superficie.
* Infarinate bene un pezzo di carta da forno. Formate un filoncino di pasta e mettetelo sulla carta infarinata. Trasferite tutto insieme in uno stampo lungo (tipo quello da plumcake). Coprite con un canovaccio pulito e lasciate lievitare nel forno o forno a microonde freddo e spento per circa 2 ore e 1/2.
* Quando la pasta ha raggiunto il bordo dello stampo, toglietela dallo stampo, lasciandola sulla carta e appiattitela leggermente con le mani (con gentilezza per non perdere l'aria incorporata nella pasta). Arrotolate poi la pasta formando di nuovo un filoncino. Infarinate bene il filoncino sotto e sopra (consiglio di usare la semola rimacinata), chiudete la carta da forno, coprite con un canovaccio e lasciate lievitare di nuovo per 1/2 ora o fino a un’ora.
* Nel frattempo, riscaldate il forno a 250°C insieme a una pentola in ghisa (la mia e ovale, ideale per cuocere un filone di pane) o un altro contenitore con coperchio idoneo a cottura nel forno, quindi senza le parti in plastica (pyrex, terracotta o simile).
* Fate scivolate il pane nella pentola rovente, fate qualche taglio con le forbici, coprite con il coperchio e cuocete coperto per 15 minuti. Togliete il coperchio e continuate a cuocere per altri 15-20 minuti o finché il pane ha una bella crosta color caramello. Se vi piace la crosta che rimane croccante più a lungo, dopo aver spento il forno, lasciate il pane dentro, direttamente sulla griglia per altri 15-20 minuti.
* Lasciate raffreddare il pane prima di tagliarlo.

Kefir bread


Prije samog recepta nekoliko napomena. Neka vas ne uplaši dužina opisa, samo sam htjela detaljno napisati kako sam ga radila. Recept od kojeg sam krenula, i koji sam kasnije malo promijenila, nije predviđao upotrebu kvasca, već samo prirodni kvas pripremljen od kefira i brašna. Recept je predviđao upotrebu kefira iz kućne izrade, ali ja sam imala samo kupovni, koji očito nema istu fermentacijsku snagu, pa meni taj kvas nakon 24 sata nije izgledao posebno živ niti sam tijekom tog razdoblja primijetila promjene, mjehuriće i sl. kako je opisano u receptu. Iz tog razloga sam mu odlučila “pomoći”. Pravila sam ga već dvaput s dva različita kefira (oba su bila bio), i uvijek je bilo isto. Ali svejedno sam stavila taj "neuspjeli kvas" jer je po meni jako pridonio okusu kruha.
Umjesto uobičajenog suhog/svježeg kvasca, koristila sam ovaj put suhi prirodni kvas od brašna kamuta (suhi, dakle u prahu, jer sama ne uzgajam kvas za kiselo tijesto). Stavila sam malo više od polovice predviđene količine ovog suhog kvasa koji ide na pola kg brašna (lievito madre di kamut). Stoga uzmite mjere za kvasac u receptu orijentativno. Prirodni kvas dodaje zbilja poseban okus kruhu, ali također zahtijeva dugo dizanje od najmanje tri sata.
Prvi put sam ovaj kruh radila s 2 šalice bijelog i 1/2 šalice integralnog brašna. Drugi put sam ga zamijesila s 1 i pol šalicom bijelog, 1/2 šalice integralnog pšeničnog, i 1/2 šalice integralnog raženog brašna. Sljedeći put ću su sigurno povećati udio integralnih vrsta brašna.




Kruh s kefirom


150 ml kefira
3 + 1/2 šalice (450 + 50-75 g) brašna
10 g suhog kvasa (lievito madre, sourdough starter)
ili kvasac ili svježi kvas (3,5 g suhog, 12,5 g svježeg kvasca, ili ako imate svježi kvas za kiselo tijesto)
200 ml mlake vode
1 žličica soli


* Pomiješajte kefir sa 75 g (pola šalice) brašna. Izmiješajte dobro vilicom da se brašno otopi.
Pokrijte komadom prozirne folije i ostavite 24 sata na sobnoj temperaturi.
* Prosijte 2,5 šalice brašna (425 g) u zdjelu, dodajte suhi kvas/kvasac (ako koristite svježi rastopite ga prvo u vodi), napravite jamicu u sredini pa u nju dodajte kefir s brašnom i sol.  Miješajte drvenom kuhačom (ili u stolnom mikseru) dodajući postepeno vodu (ovisno o vrsti brašna može vam trebati i manje vode od 200 ml), dok ne dobijete prilično vlažno tijesto.
* Dodajite sad pomalo (po žlicu otprilike) brašno miješajući odnosno lupajući tijesto kuhačom, dok se ne počne odvajati od zdjele i prestane biti ljepljivo. Premjestite tijesto na pobrašnjenu podlogu i opet ga mijesite rukama par minuta dodajući po potrebi brašno.
* Oblikujte tijesto u duguljastu veknu i stavite ga na pobrašnjen komad papira za pečenje, koji zajedno s tijestom premjestite u duguljasti kalup.  Ostavite da se diže 2,5 sata (najbolje u hladnoj, zatvorenoj pećnici ili mikrovalnoj.
* Izvadite tijesto iz kalupa zajedno s papirom (vjerojatno će se malo zalijepiti za papir), malo ga rastanjite dlanovima pa čvrsto zarolajte počevši od kraće strane (pritom čistite od brašna jer će vam inače ostati brašnene crte u pečenom kruhu).  Opet dobro nabrašnite (najbolje oštrim ili kukuruznim brašnom) papir ispod veknice i po površini kruha pa zatvorite papir i pokrijte krpom. Neka se diže opet pola sata do sat, a u međuvremenu zagrijte pećnicu.
* Uključite pećnicu na 250°C i zagrijavajte skupa i posudu s poklopcem u kojoj namjeravate peći kruh (ja koristim ovalnu posudu od lijevanog željeza, može i pekač, zemljana ili vatrostalna posuda).
* Premjestite tijesto u jako vruću posudu,  ako je papir dobro pobrašnjen bit će dovoljno skliznuti kruh u nju. Ja sam još škarama zarezala tri crte malo ukošeno. Poklopite i pecite oko 15 minuta poklopljeno. Maknite poklopac pa pecite dalje dok kruh ne dobije lijepu koricu (15-20 minuta). Ako volite da korica ostane duže tvrda i hrskava, nakon što ste iskljčili pećnicu, stavite kruh (bez posude) na rešetku i ostavite tako još 10-ak minuta.

  3. Qui l'ora di pranzo ma non c'entra niente! Questo pane è fantastico e basta, smuoverebbe le papille anche se ci si fosse appena alzati da un pranzo di nozze ^__^ Se continuo a guardarlo addento lo schermo :D! Mi stai involgiando a comprare quel lievito secco di kamut, sono stata pentata più di una volta e mi sa che ora cedo. Un bacione e complimentissimi. Buon week end

  21. I get new kefir every two days, drink two glasses and make a loaf with the rest. I use strong white at first to get it going, then after an overnight rise , knock it back with brown flour, then another rise, then in the oven next morning; rises in a small bread tin, easiest bread I've made! A great discovery, indeed.

  22. I make kefir bread with the kefir as the leavening. It only contains freshly ground whole wheat flour, salt and kefir. It takes 24 hours (so we do it every other day) and makes two loaves. So far I have no idea of the shelf life because it only lasts a day per loaf around here. :)

  23. Hi, this recipe didn't work for me. I used hommade kefir to make the starter and no additional yeast. When I mixed the kefir starter with the rest of the flour the dough hasn't risen and remained flat. I really have no idea what I did wrong - I followed the recipe precisely and the images are great as well. I baked the bread, hoping some miracle would happen in the oven but it came out flat and hard as a stone. Any ideas what went wrong? Thanks, Eva

    1. I'm really sorry to hear that. As I've written in the recipe, I've always added some yeast or sourdough starter. The original recipe, however, said the bread would rise perfectly (and so did the pictures show) without any addition using only homemede kefir. I have no experience with homemade kefir, but the first signs of fermentation should have been visible during the initial phase. If there were no signs the starter was "alive" and fermenting, you should have added some yeast to the dough.
