A touch of pink


I don't know about you, but I, in all honesty, got a bit tired of posting only cookie recipes. So if you're still waiting for some of those posted on my Christmas list, don't worry, I will post them, sooner or later.
Of course, one can't eat only cookies, even at Christmas time.
I've made this roast a couple of times already, but I managed to screw the sauce every time.
Maybe writing everything down will help me memorize the procedure better and not repeat the same mistakes next time. Yes, I will be making it again, and what better occasion than Christmas.

Grapefruit is rich in Vitamin C, pectin, fiber, pink and red variety also contain beneficial antioxidant lycopene. Studies have shown grapefruit helps lower cholesterol and is able to help the body's metabolism burn fat.

So, grapefruit will not only add some colour and embelish your plate, but will help you eat guilt free (and compansate for the butter used for cooking :))))

MARSALA TURKEY ROAST WITH GREAPFRUIT SAUCE

For the roast:
about 1 kg of boneless, skinless turkey breast meat in one piece
1 glass of dry Marsala
salt, peper
2 rosemary twigs
1 TBspoon EVOO
3 TBspoons butter

Grapefruit sauce:
3 pink grapefruits
100 g granulated sugar
1/2 glass white wine vinegar
1 TBspoon butter
1 TBspoon flour
freshly ground pepper
2 pinches of salt

Melt the butter in a saucepan, add the Extra virgin olive oil, salt and pepper.

Brush this mixture all over the meat.
Place the rosemary twigs on the meat and wrap it tightly with a piece of butcher's twine to get a compact piece.

Warm up the rest of the oil/butter mixture in a roasting pan (or Duch oven) and brown the meat on all sides.

Add the Marsala, lower the heat, cover and cook for about 50 minutes turning the meat 3-4 times (I, however, prefer to proceed cooking it in the preheated oven at 200°C, lowering to 180°C after 1/2 an hour).
Take the meat out and wrap it in a piece of aluminium foil. Filter the meat juices through a mash sieve, adding also the liquid the meat will relese after resting wrapped for about 10 minutes. Set aside.

For the grapefruit sauce:
Squeeze the juice from 2 grapefruits and filter it.


Mix the sugar, the vinegar and a TBspoon of water in a medium size saucepan. Start warming it up at medium heat until the sugar has melted, stirring all the time.
Stop stirring and let the sugar caramelize and become golden (5-7 minutes). Careful, because I overcooked it and the caramel became too dark and a little bitter.
Lower the heat, and pour in the grapefruit juice in a thin streak stirring all the time until the foam has subdued. It's important that your juice isn't cold, but at least room temperature or slightly lukewarm.


In another saucepan, melt 1 TBspoon butter, add the flour and cook for 1 minute stirring until golden.
Add the grapefruit syrup pouring it in a thin streak stirring continuously.
Cook the sauce until slightly denser, it should be creamy but still fluid (about 5 minutes).
Mix in the meat juices and stir well. Check if more salt and/or pepper is necessary.


Take the meat out of the foil, remove the twine and the rosemary twigs. Slice the meat and arrange it on a plate.

Wash the third grapefruit and cut it into thin slices without peeling it. Place them between or around the meat slices, pour a little sauce over and serve the rest separately.
Serve immediately.

FESA DI TACCHINO AL MARSALA con la SALSA AL POMPELMO

Arrosto:
circa 1 kg di fesa di tacchino in un solo pezzo
1 bicchiere di Marsala secco
sale, pepe,
2 rametti di rosmarino
1 cucchiaio di olio
3 cucchiai di burro

Salsa:
3 pompelmi rosa
100 g zucchero semolato
1/2 bicchiere di aceto di vino bianco
1 cucchiaio di burro
1 cucchiaio di farina
2 macinate di pepe
2 pizzichi di sale

Lavate e asciugate i rametti di rosmarino.
Sciogliete 3 cucchiai di burro in una padellina e unitevi un cucchiaio di olio, salate e pepate.
Spennelate questo condimento sulla fesa di tacchino da tutte le parti.
Appoggiatevi sopra i rametti di rosmarino e legatela con lo spago in modo da ottenere una forma compatta, con la parte liscia verso l'esterno.
Versate il resto del condimento in un tegame e riscaldatelo a fiamma viva.
Rosolatevi la fesa da tutte le parti, girandola con due cucchiai, finché si è ricoperta da una crosticina dorata (circa 5 minuti).
Bagnatela con il Marsala. Coprite e cuocete a fiamma bassa, girando la carne 3-4 volte, per circa 50 minuti (io preferisco continuare la cottura nel forno a 200°C, abbassando la temperatura a 180°C dopo 1/2 ora).
Avvolgete la carne in un pezzo di alluminio, e lasciatela riposare per 10 minuti prima di tagliarla.
Filtrate il fondo di cottura attraverso il colino. Recuperate anche il liquido che si è formato dentro il cartoccio di alluminio e unitelo al fondo di cottura filtrato.
La prima volta che ho preparato questo arrosto, non ho avuto il tempo per fare la salsa al pompelmo, e l'ho servito solo con questo sughetto di fondo di cottura.

Per la salsa al pompelmo:
Spremete il succo di 2 pompelmi e filtratelo.
In un tegamino unite lo zucchero, l'aceto e 1 cucchiaio d'acqua.
Riscaldate sulla fiamma media finché lo zucchero si sia sciolto mescolando ogni tanto con un cucchiaio di legno.
Aspettate che lo zucchero si trasformi in caramello di colore dorato senza più mescolare (ho seguito il tempo indicato nella ricetta - 10 minuti - ed era troppo, lo sciroppo è diventato troppo scuro e un po' amaro, quindi bisogna fare più attenzione e non lasciarlo solo ma guardare il colore).
Abbassate la fiamma e unitevi il succo di pompelmo a filo, mescolando, finché si esaurisce la schiuma che si è formata (per evitare troppa schiuma e schizzi, il succo di pompelmo non deve essere freddo ma a temperatura ambiente).
Sciogliete 1 cucchiaio di burro e unitevi la farina, mescolando per 1 minuto con il cucchiaio finché il composto è dorato.
Unite lo sciroppo di pompelmo, aggiungendolo a filo, senza smettere di mescolare con il cucchiaio di legno.
Cuocete la salsa, mescolando finché ha raggiunto la consistenza desiderata: deve essere cremosa, ma ancora fluida.
Completatela con il fondo della carne, aggiustate di sale e pepe.

Togliete la carne dall'alluminio ed eliminate lo spago e il rosmarino.
Tagliatela a fette iniziando da una delle parti appuntite.
Sistematele su un piatto da portata e irroratele con un po' di salsa versata a filo.
Lavate il pompelmo rimasto, asciugatelo e tagliatelo a spicchi sottili, senza sbucciarlo.
Guarnite il piatto della carne con pompelmo e servite la salsa a parte. Servite subito.

PUREĆE PEČENJE U UMAKU OD GREJPFRUTA

Pečenje:
oko 1 kg purećeg prsa u jednom komadu
1 čaša suhog vina Marsala (ili suhog bijelog vina)
sol, papar, vegeta
ružmarin (2 grančice)
1 žlica ulja
3 žlice maslaca

Umak:
2 ružičasta grejpfruta
100 g kristal šećera
1/2 čaše bijelog vinskog octa
1 žlica maslaca
1 žlica brašna
malo svježe mljevenog papra
2 prstohvata soli

Priprema:
Otopite maslac, dodajte mu ulje, sol i papar i izmiješajte.
Omažite time meso (uz pomoć kista), ja sam ga još i dodatno povegetila, pa uvežite čvrsto kuhinjskom špagom tako da je glatka strana izvana (umetnite grančice ružmarina pod špagu).
Zagrijte u posudi za pečenje ostatak ulja s maslacem, pa popržite puretinu sa svih strana da dobije svijetlu koricu na površini.
Dodajte Marsalu, smanjite temperaturu, poklopite i kuhajte oko 50 minuta (ili prebacite u već zagrijanu pećnicu na 200°C, smanjite na 180°C poslije 1/2 sata). Okrenite meso nekoliko puta tijekom tog vremena.
Kad je pečeno, izvadite meso i omotajte aluminijskom folijom. Sok od pečenja procijedite, a kasnije mu dodajte i onaj što ga je meso omotano folijom otpustilo naknadno.

Priprema umaka:
Iscijedite sok dva grejpa i procijedite ga.
Stavite šećer, ocat i žlicu vode u šerpicu i miješajući zagrijavajte da se šećer otopi. Ostavite da se smjesa karamelizira (ne miješajte više), oko 5-7 minuta, dok ne dobije zlatno smeđu boju.
Smanjite vatru, dodajte u tankom mlazu sok od grejpa neprestano miješajući, dok ne nestane pjena koja će se na početku stvoriti. Važno je da sok ne bude hladan već sobne temperature.
U drugoj posudi popržite 1 žlicu maslaca s 1 žlicom brašna. Dodajte sirup od grejpa u tankom mlazu neprestano miješajući drvenom kuhačom.
Kuhajte miješajući dok se umak ne zgusne. Treba biti kremast ali još uvijek tečan. Trebat će vam oko 5 minuta.
Dodajte i sok od pečenja u umak, dodajte po potrebi soli i papra.

Izvadite meso iz folije, odstranite špagu i ružmarin.
Narežite meso na tanke kriške, složite na tanjur za posluživanje, po želji ukrasite s nekoliko kriški grejpa, pospite s malo umaka, i poslužite ostatak umaka zasebno.

Umak ne treba biti ovako taman kao na slici (malo sam previše prepržila šećer, pa je okus bio malo gorak). Stoga pazite na tu fazu pripreme.
