Quick and gorgeous pasta


This past week wasn't so successful in culinary sense for me.
I cooked a lot, but trying lots of new recipes I also launched myself into several failures that my husband could hardly find words to say how horrible they were.
But that, along with the flu, helped him lose a couple of kilos, at least that's what our scale says.
This pasta, however, at least in my opinion, was one of the successfull new recipes.
Normally, whetether I use fresh or canned tomatoes, I make a smooth tomato sauce, smashing the tomatoes, and peeling the fresh ones. But then I saw this recipe, and the description was so delightful that I absolutely had to try making it this way. I happened to have some ricotta as well, and I thought it definitely wouldn't hurt to add some. I assure you, I'll never make the fresh tomato sauce in any other way, this is just too delicious. The secret is in the position of the tomatoes during the cooking (which has to be short and the heat rather high), because all the flavor and fragrance will stay imprisoned inside the tomatoes and will be released only once you mix them with the pasta. Next time you decide to make some pasta with tomato sauce, try making it this way, you won't be sorry.
Sorry the pictures are all little blurry, I think I was really in a hurry, it's no fun eating cold pasta. But there's an interesting addition to my photo equipment - the coolest tripod I've ever seen, that I hope will help my photos be less blurry. It's the first one of my Christmas presents (that I successfully convinced the Santa to bring me).
And, I almost forgot, absolutely try this sauce with some fresh pasta if you can get any.

FRESH FUSILLI WITH CHERRY TOMATOES AND RICOTTA
(4 servings)

1/2 kg cherry tomatoes
2-3 TBspoons EVOO
4 TBspoons ricotta
2-3 cloves of garlic
a handfull of fresh basil leaves
1/2 kg fresh fusilli (or similar pasta)

Bring a large pot of water to boil, salt it and cook the pasta according to the instructions.
Wash and dry the tomatoes. Cut them in half.
In a large skillet warm up the oil, add the slightly crushed and peeled garlic, and cook shortly paying attention it doesn't burn or it will give bitter taste to your sauce. Let it just release its wonderful fragrance to the oil and remove as soon as it starts browning.
Place the halved tomatoes into the skillet, cut side down, adding the chopped fresh basil as well (if available, I so miss the Summer and my herbs garden).

Cook them for a few minutes on high, without stirring, just shake the skillet often. The tomatoes should stay whole, slightly soft inside and a little caramelized on the bottom side.
Drain the pasta when it's cooked al dente, add to the skillet,

add the ricotta, toss everything together and serve. Enjoy!

Qualche settimana fa, leggendo il blog Anice & Cannella, ho visto questo fantastico sugo con pomodorini freschi, descritto in modo tale che nessuno potrebbe resistergli.
L'ho preparato la settimana scorsa, ma senza provola o fior di latte, aggiungendo invece un po' di ricotta. é davvero fantastico. Il segreto sta veramente nella posizione dei pomodorini durante la cottura (che deve essere breve e a fuoco vivace), perche tutti gli aromi rimangono imprigionati all'interno del pomodoro. Io, però, non ho messo la quantità di olio così abbondante come diceva
la ricetta. Squisito lo stesso!

FUSILLI FRESCHI CON POMODORINI E RICOTTA
(per 4 persone)

1/2 kg di pomodorini ciliegini
2-3 cucchiai di olio EVO
4 cucchiai di ricotta
2-3 spicchi d'aglio
una manciata di foglie di basilico fresco
1/2 kg di pasta fresca (tipo fusilli)

Lavate e asciugate i pomodorini. Tagliateli a metà. Scaldate l'olio in una padella larga e soffriggete leggermente l'aglio schiacciato e pelato, facendo l'attenzione di non bruciarlo. Toglietelo non appena rilascia il suo profumo e si colora.
Mettete i pomodorini nella padella, con parte tagliata rivolta verso il basso, aggiungete il basilico spezzettato e cuocete a fuoco vivo per qualche minuto senza girare, ma semplicemente scuotendo la padella ogni tanto. I pomodorini devono rimanere interi ma morbidi all'interno. Salate a fine cottura.
Cuocete la pasta in abbondante acqua salata (consiglio una pasta fresca, che davvero esalta il sapore di questo sugo, ma se preferite gli spaghetti, chi vi dice di no?), scollatela quando e al dente. Unite la pasta ai pomodorini, saltate tutto insieme e servite subito.

Ovaj način pripreme umaka od svježih rajčica doista je jedinstven. Fantastičnog okusa i mirisa. Za pripremiti ga, treba vam svega nekoliko minuta

SVJEŽI FUSILLI SA CHERRY RAJČICAMA I SVJEŽIM SIROM
(za 4 osobe)

1/2 kg cherry rajčica
2-3 žlice maslinovog ulja
4 žlice svježeg sira (ricotta)
2-3 češnja češnjaka
listići bosiljka
1/2 kg svježe tjestenine (manje ako koristite suhu)


Rajčice operite, posušite i prerežite na pola.
Zagrijte u širokoj tavi ulje i očišćene i malo zgnječene češnje češnjaka.
Pazite da češnjak ne izgori jer će dati gorak okus umaku. Čim osjetite da dobro miriše, izvadite ga iz ulja.
Stavite rajčice u istu tavu, na vruće ulje, tako da je prerezani dio okrenut dolje, i nakidane listiće bosiljaka (svježeg, ali može i suhi ili smrznuti). Kuhajte ih oko 5 minuta na jačoj vatri, bez miješanja, samo s vremena na vrijeme protresite tavu. Posolite.
U međuvremenu skuhajte tjesteninu al dente, ocijedite je i dodajte rajčicama, umiješajte i sir, još kratko sve izmiješajte i zagrijte da se okusi spoje. Po želji poslužite s ribanim parmezanom.

  2. Questa ricetta mi ricorda tanto il mio papà, perché ogni volta che la mamma preparava il sugo o il pomodoro (non i pomodorini) così come te, mio padre aggiungeva sempre la ricotta... ed è così che ho cominciato a mangiarla anche in versione salata e ora mi ci tufferei tanto mi piace!

  11. I made something like this recently and it seemed like my tomatoes skins were kind of tough. I have a lot of cherry tomatoes in my freezer to use up. I think I'll give your recipe a try and see if they come out more tender. It looks delicious!
