Sunday lunch # 2



Hope everyone's had a beautiful and pieceful weekend. Sigh, the last summer weekend this year.
So, it's almost Autumn, everyone! Did you wake up well or you're hating Monday?

Let's see if I can cheer you up with my colourful Sunday lunch #2. Yes, I'm continuing in the direction I took last Sunday and I'm joining Danielle again on her Salubrious Sunday voyage.

First of all I chose to cook turkey breast, and we all know it can be a little dull and dry when cooked. So I thought that making some skewers adding vegetable rolls would help add some flavour, and then being grilled they are quite healthy and shouldn't get so dry. And absolutely add a few drops of Balsamic vinegar when serving the skewers, it's a simply gorgeous combination.
The potatoes were a real treat. You have to try these. There's lot of space for change and variation to suit them to your taste. I, personaly, love the garlic and rosemary combo. And, although they are both quite strong, the final result was delicate, but still bursting with flavor. Add some bacon if you like ;) or other herbs you have at hand.




TURKEY AND VEGETABLE SKEWERS
AND ROSEMARY GARLIC POTATOES

(for approx. 6-7 skewers)

1/2 turkey breast (about 1/2 kg / 1lb)
2 red bell peppers
2 zucchini
potatoes (small or new, as many as you want)
salt, pepper, poultry seasoning,
1 tblspoon butter or olive oil
1 clove of garlic
1 small rosemary twig (and/or other herbs like sage, parsley etc.)

Wash and dry the peppers. Roast them in the oven, on the grill or over your gas cooker (Yeah, I played with open fire in my kitchen).

Put them in a plastic bag, close it, and let the peppers cool. Peel the skin and remove the seeds. Cut them into stripes same width as your zucchini.
Wash and dry the zucchini. Slice them very thinly, brush with oil.
Cook them in a skillet without adding oil at medium-low heat, turning once, only until they get soft. Do not overcook them. They just need to soften in order to roll them.

Peel the potatoes and cook them in boiling, salty water for 5 minutes.
Drain and let them cool a little bit. Cut slices about 1/2 cm wide but not all the way through, only to about 2/3 deep.

Mix softened butter (or olive oil if you prefer) with finely minced garlic (or pressed through a garlic press)

and finely chopped herb(s), salt and pepper.

With the help of a spatula, brush this mixture between the slices.

Place the potatoes in a roasting pan and bake for about 45 minutes or until done.

Cut the turkey breast into 1,5 cm thick slices, and then cut each slice into 1,5 cm wide stripes,

and again cut each stripe into cubes.
Season the meat as you prefer, and add a little oil as well.

Place a zucchini slice over a pepper slice and roll them together. Repeat until you have finished all vegetables. I had more zucchini slices so I rolled those alone as well.

Oil the wooden sticks for skewers and start sticking the meat cubes alternating with pepper and zucchini rolls.

Brush the skewers again with little oil and grill in a hot grilling pan.





Serve sprinkled with balsamic vinegar and potatoes.

SPIEDINI DI TACCHINO E VERDURE
E PATATE AL AGLIO E ROSMARINO

Per questa domenica ho scelto il petto di tacchino. Siccome non mi piace comprare gli spiedini già pronti (pieni di grasso e carne dura e gommosa), li preparo sempre a casa. Invece di tagliare le verdure a cubetti come al solito (che poi in cottura spesso si spezzano e cadono), ho preparato questi involtini deliziosi che oltre all'aspetto allegro e colorato hanno contribuito al sapore della carne. Un bel po' di lavoro, direte voi. In realtà no. Potete preparare tutto con anticipo, assemblare gli spiedini e poi cuocere quando è il momento di mangiare.
L'idea per le patate ho trovato sfogliando, come dice mio marito, dalla prima all'ultima pagina, l'ultimo numero di Cucina Moderna ORO - patate all'italiana, ma invece del lardo ho usato il burro e, non avendo a portata di mano altre erbe fresche, al rosmarino ho aggiunto solo l'aglio. Il risultato? Le patate molto gustose e profumate. Per non parlare del loro aspetto... Non sono belle?

Ingredienti (per circa 6-7 spiedini):

1/2 petto di tacchino (1/2 kg circa)
2 peperoni rossi
2 zucchine
patate (piccole o novelle)
sale, pepe
1 cucchiaio di burro (oppure olio d'oliva)
1 spicchio d'aglio
1 rametto di rosmarino (e/o prezzemolo, salvia, etc.)

Lavate e asciugate i peperoni. Arrostiteli nel forno o sulla griglia o sopra un fornello a gas (attenti al fuoco). Metteteli in una bustina di plastica e lasciate raffreddare. Spellate i peperoni, togliete i semi e tagliateli a filetti larghi quanto le zucchine.
Lavate e spuntate le zucchine, tagliatele a fettine sottili. Spennellate con l'olio e cuocete in padella senza aggiungere altro olio, a fuoco medio basso. Le zucchine devono soltanto ammorbidirsi per poterle arrotolare.
Pelate le patate e scottatele in acqua bollente salata per 5 minuti.
Scollatele e lasciate intiepidire.
Incidete tanti tagli profondi a distanza di 1/2 cm l'uno dall'altro arrivando a circa 2/3 del loro spessore.
Mescolate il burro ammorbidito (o se preferite l'olio EVO) con l'aglio spremuto, le erbe tritate, sale e pepe.
Con una spatola, spalmate il burro nei tagli, allargandoli leggermente.
Cuocetele nel forno già riscaldato a 180°C per circa 45 minuti o finché sono pronte.
Tagliate il petto di tacchino a fettine spesse circa 1,5 cm, e poi tagliate ogni fettina a strisce e alla fine a cubetti. Insaporite la carne come vi piace e spruzzate con un po' di olio.
Adagiate una fettina di zucchina sopra una fettina di peperone e arrotolatele insieme.
Infilzate, alternando, la carne e involtini di verdure sugli spiedini unti di olio.
Spennellate con un po' di olio, e cuocete sulla piastra ben calda.
Servite gli spiedini spruzzati con un po' di aceto balsamico con il contorno di patate.

PUREĆI RAŽNJIĆI S POVRĆEM
I KRUMPIR S BIJELIM LUKOM I RUZMARINOM


Obično se vikendom svi opustimo i želimo uživati u dobroj hrani ne misleći na kalorije, masnoće ili koliko je nešto nezdravo. Važno je da je ukusno i dobro.
Ja sam uspjela pripremiti zdrav i uravnotežen obrok, a da ni privlačan izgled ni okus nisu bili uskraćeni.
Kao prvo odabrala sam pureća prsa, jer zna se da je bijelo meso zdravije, manje masno i lakše probavljivo. Upotpunila sam ražnjiće povrćem i sve ispekla u gril tavi uz vrlo malo dodatnih masnoća (koristila sam maslinovo ulje, jer zna se koliko je korisno u borbi protiv kolesterola i ne sadrži "zločeste" masnoće, pazite samo na količinu, jer je ipak kalorično). Pečeni krumpir, lijepo začinjen i mirisan upotpunio je ovaj obrok potrebnim ugljikohidratima.
Kako vam se sviđa moj ovotjedni nedjeljni ručak?
Uživajte, bilo da ste sami sa svojom obitelji ili imate goste. Možete sve pripremiti i večer ranije, pa samo dovršiti kad je vrijeme ručka.

Sastojci (za otprilike 6-7 ražnjića):

1/2 purećeg prsa (oko 1/2 kg)
2 crvene paprike
2 tikvice
krumpir (odaberite manje ili mlade krumpire, količina po želji)
sol, papar, vegeta
1 žlica maslaca ili ulja
1 češanj bijelog luka
1 grančica ruzmarina (i/ili lista peršuna, žalfije, itd.)

Operite, posušite i ispecite paprike (u pećnici, na roštilju ili kao ja na plinskom kolu štednjaka). Stavite ih u plastičnu vrećicu i ostavite da se ohlade. Ogulite i odstranite sjemenke. Narežite na trake široke otprilike kao i tikvice.
Tikvice narežite na jako tanke ploškice, namažite s malo ulja pa pecite u tavi (bez dodavanja drugog ulja) na niskoj temperaturi, dok ne odmeknu dovoljno da ih možete saviti bez da pucaju.
Ogulite krumpir i kuhajte ga u ključaloj slanoj vodi 5 minuta.
Ocijedite i ostavite da se malo ohladi.
Zarežite nožem kriške širine 1/2 cm, ali ne do kraja - samo do 2/3.
Pomiješajte omekšali maslac s usitnjenim ili protisnutim bijelim lukom, usitnjenim aromatičnim biljem, malo soli i papra. Namažite tu smjesu između zarezanih kriški krumpira. Složite krumpire u tepsiju i pecite u zagrijanoj pećnici na 180°C oko 45 minuta ili dok nisu pečeni.
Narežite pureće prse na kriške debljine oko 1,5 cm. Svaku krišku narežite na trakice od 1,5 cm i opet na kockice. Posolite, povegetite, malo nauljite i sve izmiješajte da se začini ravnomjerno rasporede.
Stavite krišku tikvice preko kriške paprike i smotajte ih skupa.
Nauljite drvene štapiće za ražnjiće i nabodite na njih naizmjenično meso i povrće.
Po potrebi još sasvim malo nauljite cijele ražnjiće i pecite u dobro zagrijanoj gril tavi ili na roštilju.
Poslužite ražnjiće poškropljene balzamičnim octom uz pečene krumpire.
